Ingredients
1(1.34-pounds)package Smithfield pork loincut into one inch slices
In a large skillet, add 1 tablespoon olive oil. Add the sliced pork and cook until no longer pink, about 4-5 minutes on each side. Remove and set aside on a plate.
Add the remaining 2 tablespoons of olive oil. Add Brussels sprouts, sweet potatoes, and baby potatoes. Sauté until almost fork tender, about 8 minutes.
Whisk together the Dijon mustard, maple syrup, and apple cider vinegar in a small bowl. Pour on top of the vegetables and toss to coat.
Add the pork back to the skillet and heat throughout. Serve warm and enjoy!
