Pour 1 tablespoon olive oil and 4 cloves minced garlic in the bottom of a 5-6 quart slow cooker.
Place 1 pound baby carrots and 1 pound baby red potatoes into the bottom of the slow cooker. Add 8 boneless skinless chicken thighs on top of the vegetables.
In a small bowl, whisk together ½ cup brown sugar and ¼ cup balsamic vinegar. Pour the vinegar mixture over the chicken thighs and veggies.
Cover and cook on LOW for 8 hours or on HIGH for 4 hours.
Add 1 pound green beans during the last 30 minutes of cooking time. Garnish with fresh chopped parsley for garnish and enjoy!
