Slow Cooker Lemon Chicken Piccata is creamy lemony sauce-coated noodles with juicy lightly breaded chicken with a hint of garlic, all topped with savory capers!
2boneless skinless chicken breasts cut in half lengthwise
¼cupall-purpose flour
1teaspoongarlic powder
½teaspoonsalt
¼teaspoonpepper
1tablespoonneutral cooking oil
6ounceslinguine or thin spaghetti noodles
2cupschicken broth
4tablespoonslemon juice
½cupheavy cream
¼cupcapers
salt and pepper to taste
Instructions
Whisk together ¼ cup all-purpose flour, 1 teaspoon garlic powder, ½ teaspoon salt, and ¼ teaspoon pepper. Dredge 2 boneless skinless chicken breasts cut in half lengthwise in the flour mixture to coat on both sides.
Drizzle a large skillet with 1 tablespoon neutral cooking oil, and cook the breaded chicken over medium-high heat for 1-2 minutes on each side to brown but not cook through.
spray a slow cooker with non-stick cooking spray. Place chicken in a single layer in the slow cooker, cover, and cook on LOW for 4 hours. Transfer chicken to a plate and cover.
Add 6 ounces linguine or thin spaghetti noodles to slow cooker, pour 2 cups chicken broth over the top, cover, and cook on HIGH for 15 minutes. Uncover, stir in 4 tablespoons lemon juice, ½ cup heavy cream, ¼ cup capers, and salt and pepper to taste. Cook another 10 minutes on high.
Add chicken back to slow cooker until hot throughout. Serve with additional lemon slices and fresh thyme if desired. Enjoy!
