Line a slow cooker with a liner or spray with non-stick cooking spray.
Place 1 peeled and quartered onion, 3 garlic cloves, 3-4 diced whole carrots,, ½ cup chicken broth, 1 sprig rosemary, and 1 sprig sage in the bottom of the slow cooker.
Combine the softened ¼ cup softened butter, 1 teaspoon garlic powder, 2 teaspoons dried onion flakes, 2 teaspoons salt, 1 teaspoon paprika, 1 teaspoon dried sage, 1 teaspoon dried rosemary, 1 teaspoon dried thyme, and ½ teaspoon black pepper in a bowl. Stir to incorporate the herbs into the butter.
Spread the butter mixture generously all over the thawed 5 pounds thawed boneless turkey breast roast.
Place the turkey into the crockpot and cook on LOW for 6 hours or HIGH for 4 hours. The turkey is done when the temperature reads 165 degrees Fahrenheit with a thermometer.
Carefully remove the turkey from the slow cooker and place it on a platter. Let it rest for 5 minutes before slicing, and enjoy!
