Southwest Chickpea Salad is a delicious and fresh chick pea salad filled so many delicious flavors and textures! This salad is fresh and healthy and easy to make!
In a large bowl combine 1 (15-ounce) can rinsed & drained black beans, 1 (15-ounce) can rinsed & drained chickpeas, 1 (15-ounce) can corn, 1 pint halved cherry tomatoes, 2 ½ cups diced avocado, and 1 (4.25-ounce) can diced olives.
In a small bowl whisk together 2 tablespoons lime juice, 2 tablespoons extra virgin olive oil, 1 teaspoon cumin, ¼ teaspoon chili powder, ¼ teaspoon salt, and ¼ cup chopped fresh cilantro.
Pour the dressing over the salad and toss until combined. Garnish with ¼ cup crumbled feta cheese and serve immediately.
