Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
Using a hand mixer or a stand mixer, whisk together the ¼ cup + 2 tablespoons butter,½ cup white sugar, and ¼ cup strawberry Jell-O mix, whisk until light and creamy.
Beat in the 1 large egg and ¾ teaspoon vanilla extract.
In a separate bowl, whisk the 1 ¼ cups all-purpose flour, ½ teaspoon salt, and ½ teaspoon baking powder.
Slowly add the flour mixture to the Jell-O mixture, then stir in the ⅓ cup shredded sweetened coconut.
Using a cookie scoop, scoop out large bits of the dough, and place them on the prepared pan.
Bake for about 6 to 8 minutes, then transfer the cookies to a cooling rack.
