Summer Cobb Salad is filled with fresh summer fruits and veggies. It’s loaded with grilled chicken, bacon, hard boiled eggs, avocado, goat cheese, berries, cucumber, grilled corn and tossed in a simple balsamic lime vinegar dressing. Every bite is refreshing, bright, and summery!
6cupsmixed greensspring mix or chopped romaine lettuce
3cupssliced chicken breast
8slicescooked and chopped bacon
4quartered hard-boiled eggs
1 ½cupsgrilled corn cut off the cobb
2sliced avocados about 2 cups
1cupsliced cucumbers
1 ½cupsfresh berriesI used blackberries and raspberries
4ouncescrumbled goat cheese crumbled

Balsamic Vinaigrette
½cupextra virgin olive oil
¼cupbalsamic vinegar
3tablespoonsfresh lime juice
1teaspoonlime zest
1teaspoondijon mustard
1teaspoonhoney
½teaspoonsalt
¼teaspoondried basil
⅛teaspoonground black pepper
Instructions
Add 6 cups mixed greens to a large bowl and top with 3 cups sliced chicken breast, 8 slices cooked and chopped bacon, 4 quartered hard-boiled eggs , 1 ½ cups grilled corn cut off the cobb, 2 sliced avocados , 1 cup sliced cucumbers , 1 ½ cups fresh berries, and 4 ounces crumbled goat cheese . Toss to combine. Season with salt and ground black pepper to taste.
To make the vinaigrette, add ½ cup extra virgin olive oil, ¼ cup balsamic vinegar, 3 tablespoons fresh lime juice, 1 teaspoon lime zest, 1 teaspoon dijon mustard, 1 teaspoon honey, ½ teaspoon salt, ¼ teaspoon dried basil, and ⅛ teaspoon ground black pepper to a jar. Close it and shake until fully combined.
Pour the desired amount of dressing over the salad and toss to combine. Add more dressing as desired.
