Add 1 pound peeled and deveined large or jump shrimp, leaving the tails on if you prefer, to a large bowl and season with salt and ground black pepper.
Add ½ cup olive oil, ¼ cup red wine vinegar, 3 teaspoons minced garlic, 1 tablespoon Italian seasoning, 1 tablespoon lemon juice, 2 tablespoons soy sauce, 1 teaspoon dijon mustard, and 1 tablespoon Worcestershire sauce to a medium bowl and whisk to combine.
Pour the marinade over the shrimp and stir until they are all well coated. Cover it and let the shrimp marinate in the refrigerator for at least one hour or overnight.
Remove the shrimp from the marinade and place them in the air fryer basket. Cook at 400 degrees Fahrenheit for 8 minutes or until pink and cooked throughout.
