Add enough vegetable oil for frying to a large saucepan to fill it at least ½-inch up the sides, about 2 quarts of oil. Heat over medium-high heat until it reaches 350 degrees Fahrenheit.
In a small bowl, whisk together 1 cup all-purpose flour, 1 teaspoon salt, and 1 teaspoon ground black pepper.
In another small bowl, whisk together 3 large eggs and 2 tablespoons milk. In a third small bowl, combine 1 cup plain Panko breadcrumbs , 1 tablespoon cajun seasoning, and 1 tablespoon Italian seasoning.
Dredge 1 pound peeled and deveined large shrimp with tails removed in the flour mixture, followed by the egg mixture, and lastly in the panko mixture.
Carefully add the breaded shrimp to the hot oil in 2-3 batches and fry until golden brown, about 3-4 minutes. Remove with a slotted spoon and transfer to a paper towel-lined plate to drain while you finish frying the remaining shrimp. Serve immediately.
