Preheat oven to 425 degrees Fahrenheit. Start by cutting off the tops of 4 large tomatoes. Cut around the top edge, scoop out the insides, and place in a baking dish.
In a medium-sized skillet cook and crumble ½ pound ground sausage. Remove grease and add to a medium-sized bowl with 1 cup cooked white rice, 1 cup shredded Colby jack cheese, ½ cup shredded parmesan cheese , 2 tablespoons chopped basil, salt and pepper, and 1 teaspoon Italian seasoning.
Use the mixture and stuff each tomato. Top with ½ cup shredded Colby jack cheese. Bake for 15-20 minutes.
