Preheat oven to 375 degrees Fahrenheit and lightly spray a sheet pan with non-stick cooking spray.
Cut 4 boneless skinless chicken breasts into 1-inch pieces. Add chicken, 4 chopped bell peppers any color, and 1 cup chopped white onion to a large bowl and drizzle 2 tablespoon vegetable oil over the top.
Sprinkle salt and pepper to taste, 2 teaspoons taco seasoning, 1 teaspoon chili powder, 1 teaspoon cumin, and 1 teaspoon garlic powder over the top. Toss to combine.
Transfer everything to the prepared sheet pan and spread out so it's arranged in an even layer.
Bake for 15-20 minutes until the chicken is fully cooked, and the veggies are tender. Drizzle with juice of 1 lime and sprinkle chopped cilantro over the top. Serve alone or over steamed rice.
