Parmesan Garlic Potato Foil Packets are potatoes that get cooked to tender perfection and have the best parmesan garlic flavor! These make an amazing side dish to any meal!
In a large bowl add 2 pounds red potatoes, cut into 1 inch pieces , 2 tablespoons olive oil, ½ cup grated parmesan cheese, 3 minced garlic cloves, 1 tablespoon Italian seasoning, ¼ teaspoon salt and ¼ teaspoon pepper. Toss until coated.
On a sheet of aluminum foil add the potatoes. Fold in the sides to create a foil pack and seal the edges. Place on the grill on medium high heat and grill for 20-30 minutes or until tender.
Top with chopped parsley for garnish and freshly grated parmesan cheese.
