Add 4-5 sliced roma tomatoes, 2 tablespoons olive oil, 1 tablespoon Italian seasoning, 3 teaspoons minced garlic, and ¼ cup shredded parmesan cheese to a medium bowl and toss until the tomatoes are evenly coated.
Place the tomatoes in a single layer in a 9 x 13-inch baking dish, or a baking sheet. Roast for 20-30 minutes, until the skin softens and the cheese is browned. Top with fresh basil and serve immediately.
