In a large skillet add 2 tablespoons olive oil and cook 1½ pounds boneless skinless chicken breasts on medium high heat for 3-5 minutes on each side until cooked through and to 165 degrees Fahrenheit. Remove chicken and set aside on a plate.
Add 4 ounces sliced mushrooms to the skillet and cook until tender for about 2-3 minutes. Remove and set aside on plate.
Add 1 cup heavy cream, ½ cup chicken broth, 1 teaspoon garlic powder, 1 teaspoon Italian seasoning, and ½ cup grated parmesan cheese to the skillet. Whisk over medium high heat until it starts to thicken for 3-4 minutes. Add 1 cup chopped spinach, ½ cup julienned sun dried tomatoes, and let it simmer until the spinach starts to wilt. Add the chicken and mushrooms back to the pan and serve over pasta if desired.
