The big move happened this weekend. We are so excited to be in such a nice place of our own and stay in the area that we love! It is so much work moving. I absolutely hate it. But pregnant and moving. That is a who different story. The night before the move, my back had gone out and I had to crawl up the stairs at one point. Lucky for me I could use the pregnancy card during the big move and say that I couldn’t lift anything. But still. So much work. There is no better way to do spring cleaning then to move!

Let’s talk about these brownies though. Ok really there is no talking about them. They speak for themselves. ๐Ÿ™‚ I really liked the brownie base in these brownies. They weren’t too fudgy and they didn’t make the frosting too rich on top of them. They were the perfect balance. The cookie dough frosting on top was AMAZING. And no raw eggs were involved in the making of it! You can’t go wrong with these fantastic brownies. They were a hit!

Instructions 

Brownies

  • Preheat the oven to 350 degrees Fahrenheit. Line a 13 x 9 x 2-inch baking dish with parchment paper and set aside.
  • In a medium-sized mixing bowl combine the 1 cup melted butter, 1 cup granulated sugar, and 1 cup brown sugar. Mix until combined then add the 4 large eggs and 1 teaspoon vanilla extract. Set aside.
  • In a separate bowl, combine 2 cups all-purpose flour, โ…“ cup unsweetened cocoa powder, 1 teaspoon baking powder, and ยฝ teaspoon salt. Slowly add the flour mixture to the butter mixture and mix well until incorporated.
  • Spread the brownie batter into the prepared baking dish.
  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow the brownies to cool completely before frosting.

Cookie Dough Frosting

  • In a medium-sized bowl, add ยฝ cup softened butter and ยพ cup brown sugar. Using a hand mixer, beat together until smooth.
  • Add in 1 teaspoon vanilla extract and mix well. Add 1 ยผ cup all-purpose flour and ยฝ teaspoon salt and mix to combine.
  • Pour in 5 tablespoons milk then beat until the frosting is fluffy.
  • Stir in 1 cup mini chocolate chips then spread the frosting on the cooled brownies.

  2. YUM! I recently made a similar brownie and cooking cadbury mini eggs into them and topped with cookie dough! The combination of the brownie and cookie dough is so DELISH! Always love your recipes;)
