You only need 7 simple ingredients to make this strawberry mousse recipe. Friends and family will assume you spent hours making this elegant treat, but it’s so easy to whip up! Check out the recipe card at the bottom of the post for exact measurements.

  • Fresh Strawberries: The star ingredient of this mousse recipe! They provide the fresh strawberry flavor that tastes SO good. Be sure to use ripe, bright strawberries that are bursting with flavor.ย 
  • Granulated Sugar: Gives the recipe the right amount of sweetness to balance the tart.
  • Fresh Lemon Juice: Keeps the fruit flavor nice and bright!
  • Kosher Salt: A small amount will enhance the overall flavor.
  • Unflavored Gelatin: Ensures the mousse has a smooth and light texture.

How to Make Strawberry Mousse

This strawberry mousse recipe is fuss-free, and the results are gorgeous! We like to add sliced strawberries to the side of each glass for an impressive yet simple presentation.

  1. Blend: In a blender, blend the strawberries with the sugar, salt, and lemon juice until pureed. Strain through a fine mesh strainer.
  2. Simmer: Add the strawberry mixture to a small saucepan and bring to a simmer over medium heat. Simmer for 5 minutes before whisking in the freeze-dried strawberry powder.
  3. Bloom the Gelatin: Meanwhile, bloom the gelatin in ยผ cup cold water by adding the water to a small bowl and sprinkling the gelatin over the top. Let it sit for 5 minutes.
  4. Chill: Add the gelatin to the strawberry purรฉe and cook over low heat for 2 minutes, until the gelatin is completely melted and the mixture thickens. Remove from the heat and transfer to a medium bowl. Cover and chill for at least 1 hour.ย 
  5. Whip: When the strawberry mixture is done chilling, add the whipping cream to a large bowl. Beat with a hand mixer or a stand mixer fitted with the whisk attachment until you reach stiff peaks.ย 
  6. Mix: Fold the strawberry mixture into the whipped cream until fully combined and no streaks of white whipped cream remain. Spoon or pipe the mousse into cups or bowls. Cover and chill for at least 2 hours.ย 
  7. Serve: Top with a dusting of powder from freeze dried strawberries if desired.

Strawberry Mousser Tips and Tricks

Strawberry mousse is super easy to make. Follow these tips, and it will turn out perfect every time!

  • Strawberry Tip: For the best, boldest strawberry flavor, use the ripest strawberries you can find! If you have trouble finding good fresh strawberries, thaw and strain the liquid from 1 pound of frozen strawberries. Prepare the recipe as directed.
  • Sweetness: If you want it to taste sweeter, add ยผ of powdered sugar to the heavy cream when you whip it.
  • Whipped Cream: To help your cream whip faster, place the bowl and whisk attachment in the freezer for at least 15 minutes before adding the cream.
  • Pipe the Mousse: No piping bag? No problem! Use a large ziplock bag with the corner snipped off to pipe the mousse into your cups.

Storing Leftovers

One of the great things about this strawberry mousse is that you can make it in advance! It’s perfect to make ahead for a party or event, so it’s ready to go when you need it!

  • Make Ahead: The strawberry mixture can be prepared up to 3 days in advance. When you’re ready to make the mousse, whip the cream and proceed with the recipe. You can also completely prepare the mousse up to 2 days in advance. Keep each cup covered and chilled in the fridge until you’re ready to serve.
  • Storing Leftovers: Leftover mousse will keep in the fridge for up to 2 days.
