The holidays are quickly approaching us and it is such a busy time of the year. Between all of the holiday parties, performances, and baking, I still love to feed my family a hearty and comforting meal. I love a quick and easy meal and gnocchi has always been a family favorite to cook with. We loved as kids when my mom would be cooking a hearty meal for us that involved gnocchi. My mom would always make this tomato gnocchi bake that we gobbled up. Now, my kids love it just as much and I cook dishes with it all of the time.
This dish is bringing you so many delicious savory and hearty flavors. I love using McCormick’s spices in the dishes that I create and rubbed sage is one of my favorites to use. It is a strong aromatic herb with a sweet and bitter pine-like flavor. It complements the other spices in this dish so well. It is amazing how it can bring out such awesome flavor in this dish and is the star ingredient.
What goes well with Sage?
The strong flavor of sage means that a little goes a long way, so use sparingly. Sage works great in Italian dishes and is typically served with pasta or gnocchi.
This dish is ready in about 30 minutes and simple to make from start to finish. You start by sautรฉing your onions, garlic, and sausage. Once that is ready to go you add the rest of the ingredients including chicken stock, spices, spinach, and gnocchi. Top it off with some cheese and it is ready to bake!
The smell of this baking is so good and my kids couldn’t wait to dig in. It had the perfect balance of flavors and spices and the sausage inside made it so hearty. This is an excellent meal in one. It is perfect for busy nights, especially around the holidays when you want a nice comforting meal. This recipe is a keeper and one that you will want to make again and again!

Ingredients
- 1 tablespoon olive oil
- 1 ยฝ cups chopped onion about 1 medium onion
- 2 teaspoons minced garlic
- 1 (13-ounce) package smoked sausage
- ยฝ cup chicken stock
- 1 (14.5-ounce) can fire-roasted diced tomatoes
- 1 teaspoon ground thyme
- ยฝ teaspoon dried rosemary
- ยฝ teaspoon rubbed sage
- ยฝ dried parsley
- ยฝ teaspoon garlic powder
- seasoned salt, to taste
- ground black pepper, to taste
- 1 (16-ounce) package uncooked gnocchi
- 1 cup fresh spinach
- ยฝ cup grated mozzarella cheese
- ยผ cup grated parmesan cheese
Instructions
- Preheat the oven to 425 degrees Fahrenheit and move a rack into the upper third of the oven. Heat a large oven-safe skillet on the stove over medium-high heat.
- Slice 1 (13-ounce) package smoked sausage into ยผ-inch thick coins and add it to the skillet. Cook over high heat until lightly browned or about 4-6 minutes.
- Reduce the heat to medium-high and add 1 tablespoon olive oil. Add 1 ยฝ cups chopped onion and cook for about 4 minutes until it begins to turn translucent. Add 2 teaspoons minced garlic and cook and stir for another 30 seconds.
- Add ยฝ cup chicken stock, 1 (14.5-ounce) can fire-roasted diced tomatoes, 1 teaspoon ground thyme, ยฝ teaspoon dried rosemary, ยฝ teaspoon rubbed sage, ยฝ dried parsley, ยฝ teaspoon garlic powder, seasoned salt, ground black pepper, and 1 (16-ounce) package uncooked gnocchi. Stir until everything is well combined. Gently stir in 1 cup fresh spinach and make sure everything is covered with liquid.
- Top with ยฝ cup grated mozzarella cheese and ยผ cup grated parmesan cheese, then place the skillet in the oven. Bake for 17-22 minutes. If desired, turn on the broiler at the end and broil for another 2-3 minutes to get the cheese topping extra browned and delicious.
- Remove the skillet from the oven and top with a sprinkle of additional salt, pepper, and chopped fresh thyme if desired. Serve immediately.

Chose this recipe to use with my first homemade batch of gnocchi. It was so good! The combination and quantities of the herbs was perfect. I’d use this recipe again using regular pasta as well.
Made this tonight for dinner and it was very good. I had two boneless chicken breasts left over from last night, so I browned and added. I did follow the recipe as written with exception to adding the chicken. This was a very hearty meal with French bread. The husband is not a fan of on one-pot meals, but this one will go in the rotation. Thanks for the great recipe!

Can frozen spinach be used in place of fresh?
Yes, be sure to let it thaw and using a paper towel squeeze out the water. Hope that helps!

The ingredients call for fire roasted tomatoes and the directions calls for Italian tomatoes. Which one do you recommend?
I like either but the original recipe is fire roasted tomatoes. If you would not like the spiciness then Italian roasted tomatoes are best.
We made this dish tonight. It was absolutely delicious. The only thing off for us was the amount of gnocchi. I’ll definitely cut that in half. We try not to eat a lot of white. This is the 3rd or 4th dish we’ve tried from your site! Thank you, thank you, thank you!

By uncooked gnocchi, do you mean dry gnocchi in a box or fresh gnocchi in the refrigerated section of the pasta aisle?
Also, did you use a cast iron pan? I’m knew to those as well…
