My two favorite things in a recipe. Salmon and pistachios. For Christmas last year, I had one box under the Christmas tree from my parents. It was a gift card and a bag of Costco pistachios. Best.Christmas.Ever. My parents know me a little too well. And it was my dad who got our family addicted to pistachios. And sunflower seeds. But that is a whole different obsession. Hmmm sunflower seed salmon. ๐Ÿ™‚

The dill, lemon, brown sugar, and pistachios combined perfectly to give it an amazing salty sweet taste. I love grilling salmon because it takes less than 10 minutes and peels apart with your fork.

Grilled Pistachio Salmon

Amazing melt in your mouth salmon grilled to perfection with the perfect pistachio glaze on top!

Cook Time: 10 minutes
Total Time: 20 minutes

Ingredients 

Instructions 

  • Heat a grill to medium-high heat.
  • Combine the pistachios, sugar, lemon juice, dill, and pepper in a medium bowl.
  • Spoon the pistachio mixture evenly over each salmon fillet. Press the mixture gently onto the salmon.
  • Place the salmon on the hot grill. Cover the grill with the lid and grill the salmon for 5 to 10 minutes or until the fish flakes easily with a fork.

Notes

To grill the salmon, I used a grilling basket lined it with aluminum foil thensprayed it with cooking spray. The salmon was able to grill in the juices and I didn't lose any pistachios. It turned out amazing!

  1. Why the brown sugar in this recipe and the honey in your Pistachio crusted salmon recipe? I really like the other ingredients but it seems like adding the sweetness will ruin it. Is it possible to just leave the sugar or the honey out of those recipes?

    I too am a pistachio nut! And I like cooking outdoors during the summer, so I was really happy to find your Grilled Pistachio Salmon recipe. I just made it, and it was delicious! So simple, too!
    There weren’t any lemons in the fridge so I used lime juice. And I used a cast iron skillet on the grill to make sure I didn’t lose any of the pistachio & brown sugar goodness. The only other change I made was to salt the salmon before topping with the mixture. I will definitely make this again for my wife, now that I know it will be a success! ๐Ÿ™‚

  4. I’m interested in making the recipe you posted. However, in the directions to list to “combine everything with the lemon juice” and you list no lemon juice in the ingredients list. How much should be used?
