Life is busy for everyone right? And it is only going to get more busy this time of year. I am trying to bring you delicious meals that are ready in 30 minutes or less. This is one of those meals.caprese chicken on a white plate.Just getting ready for Halloween this week has been busy. On Monday I realized that my boys are going to need Halloween costumes. Every year I say that I am going to be more on top of things. I probably should also just plan on doing my Christmas shopping a couple of days before Christmas. Some people are just so organized and on top of things. I totally wish that I were one of those people. ๐Ÿ™‚

I have even been struggling cooking for my family at night. I loved how fantastic this meal turned out. The best part was that it was ready in 30 minutes. I served it with a side of angel hair pasta and salad. This chicken had some of my favorite flavors in it. Basil, garlic, and balsamic vinegar. Then top it with some melty mozzarella cheese and it makes the perfect 30 minute meal. The family loved it including the picky eater…. without the tomatoes if course. ๐Ÿ™‚

Caprese Chicken

An easy and delicious 30 minutes meal that is packed with flavor and topped with cheese.
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Servings: 4 Servings

Ingredients 

Instructions 

  • In a large pan heat 1 tablespoon of the olive oil over medium-high heat.
  • Season the chicken with salt and pepper and add them to the pan, cook for about 6-8 minutes on each side, until the chicken is cooked through.
  • While the chicken is cooking add the remaining tablespoon of olive oil to a medium pan and cook the garlic over medium heat for just a minute.
  • Add the halved cherry tomatoes and cook for 1-2 minutes until they start to wrinkle and the skin softens. Add chopped basil.
  • Top the cooked chicken with mozzarella cheese and tomato mixture. Cover and cook until the cheese has, splash with balsamic vinegar and serve.

    My daughter made this. and it was positively delicious, and if you are lucky enough to have a piece left over, the next day it tastes even better after marinating. Yum!! It was wonderful.

This recipe was simple and delicious!Grilled Chicken Caprese The chicken breast gets seasoned with Italian seasonings, garlic powder and onion the chicken then top each breast with a slice of mozzarella cheese, tomato, basil and a drizzle of the homemade balsamic reduction.That is exciting!
