I just got home from a visit to North Carolina. I always love to travel to new places and get inspired to make some delicious food from around the country. I have been to North Carolina a few times now, but we decided to visit Wilmington for a weekend. We had fun at the beach and exploring the beautiful town and we especially loved the food!
We went to the restaurant Oceanic that is right on the pier on Wrightsville Beach. It was absolutely beautiful! It overlooked the beach while you ate on the pier. And while you are waiting for your table, you can go for a walk on the beach. It was such an incredible experience.
I love salmon so I ordered their special. Mango Chipotle Barbecue Salmon. It sounded perfect for summer and was absolutely delicious. The sauce was sweet and spicy and I loved the flavor. I couldn’t wait to make it at home!
The mango chipotle barbecue sauce that I made was exactly how I remember it tasting! It was so good I just couldn’t get enough. I am a wuss when it comes to spice but it had just enough of a kick to add delicious flavor to the sauce.

Ingredients
- 4 salmon fillets 6 ounce
- salt and pepper
- 1 mango peeled and cubed
- 1 clove garlic
- 2 chipotle pepper in adobo sauce
- 1/2 cup ketchup
- 2 tablespoons brown sugar packed
- 1 Tablespoon rice wine vinegar
- Chopped mango and green onions for garnish optional
Instructions
- Preheat oven to 400 degrees. Spray a 9x13 inch pan with non stick cooking spray. Place the salmon in the pan and cover with aluminum foil and bake for 15-17 minutes until the salmon is opaque in the center. I like to remove the aluminum foil the last few minutes of baking to brown the tops.
- While the salmon is baking place mango, garlic, chipotle pepper, ketchup and brown sugar, and rice wine vinegar in a food processor. Pulse until smooth. Spread about 1-2 Tablespoons of sauce on each of the baked salmon. Garnish with chopped mango and green onions.
