If you are searching for the perfect banana bread recipe, your search is over. This is another great recipe from our friend Jeremy’s family. It was gone in 5 minutes. My boys both gobbled it up. I loved it because it was so easy to throw together and I could use up all of my over-ripe bananas!

Barton Banana Bread

Total Time: 1 hour 20 minutes

Ingredients 

Instructions 

  • Preheat oven to 350 degrees, and spray a 9x5 inch loaf pan with cooking spray.
  • Using a hand mixer mix the sugar, shortening, and egg. When they are smooth mix in the milk.
  • In a separate bowl whisk together the flour, baking powder, and salt.
  • Using a spatula or spoon mix the flour mixture into the sugar mixture until just combined.
  • Add the mashed banana to the batter and mix until just incorporated, the batter should be a little lumpy.
  • Pour the batter into the prepared pan and bake for 50-65 minutes. A toothpick inserted should come out clean.

Notes

I checked my loaf at 50 minutes and ended up baking it for another 5 minutes before it was ready. Check the loaf at 50 minutes and then every 5 minutes after that.

  1. That bread looks so good! I love banana bread, but have never tried making any myself. I think I better though because I could really go for a piece of that!

    1. This is close to a recipe that I’ve been using for over 30 years… try and use 1/2 cup of brown sugar and 1/2 white sugar
