My hubby and I recently had a date night and we went to Brio. Brio is one of my favorite places to go and eat. They have amazing salads and I love their Bacon Carbonara. We both love bruschetta so we ordered the bruschetta appetizer sampler. They had so many amazing different kinds to sample. This creamy feta and bacon one was our favorite and I had to come home and make it immediately!

The creamy feta is the best part. Feta is one of my favorite kinds of cheese. And made into a creamy spread it was incredible. This appetizer has so many flavors in each and every bite. The tomatoes, bacon, and basil topped the creamy feta perfectly. They turned out just like I had remembered at Brio and were a huge crowd pleaser!

Creamy Feta and Bacon Bruschetta

A delicious creamy feta and bacon appetizer that has so much amazing flavor in each bite!

Servings: 20 Servings

Ingredients 

  • 6 ounces crumbled feta
  • 2 ounces cream cheese
  • 2 tablespoons olive oil
  • 1 teaspoon minced garlic, about 1 clove
  • salt and ground black pepper, to taste
  • 6 slices bacon, cooked and chopped
  • ยฝ cup halved grape tomatoes
  • 3 tablespoons chopped fresh basil
  • 1 baguette, cut into ยผ-inch diagonal slices and toasted, about 20 slices

Instructions 

  • Add the feta, cream cheese, olive oil, and garlic to a food process and pulse until smooth and creamy. Season with salt and pepper to taste.
  • Spread creamy feta on top of each toasted baguette slice. Top with the grape tomatoes, chopped bacon, and fresh basil.

Notes

To toast the baguette slices in the oven, brush each slice with olive oil and sprinkle with salt. Bake at 375 degrees oven for 12-15 minutes, until golden brown. Alternatively, you can toast them in the air fryer by brushing the slices with olive oil and sprinkling with salt, arranging them in a single layer in the basket of the air fryer, and then baking them at 400 degrees Fahrenheit for 3-4 minutes.ย

    Made these for a party. I did make a little change. I marinated my tomatoes with olive oil, garlic basil and a little salt. Love the feta spread. This is a great summer appetizer! Will definitely make this again!๐Ÿ˜€
