One pan meals have saved me this summer. I mean they are pretty amazing because you don’t have to heat up your house with the oven. BUT they are so quick and easy and on the dinner table in 30 minutes. It feels so much better when I make a delicious meal for my kids even though we are so busy. It is amazing what you can create with common ingredients and incredible spices.

I recently discovered McCormick’s new Herb Grinders and I am o-b-s-e-s-s-e-d. They contain larger herb pieces that are gently dried that lock in the fresh herb flavor that are released upon grinding. They are perfect for getting the fresh herb taste without having to chop anything!

The thing that I love the most about the new Herb Grinders is that they also make a nice garnish for serving your meal and add extra flavor. A few twists on the top of your food right before serving and you are good to go!

Creamy Tomato Italian Parmesan Chicken

Creamy Tomato Italian Parmesan Chicken is a creamy red tomato parmesan sauce with delicious italian spices. The chicken gets smothered in melty parmesan cheese and will be one of the most delicious meals you eat!
Prep Time: 5 minutes
Cook Time: 25 minutes
Servings: 4

Ingredients 

Instructions 

  • In a large skillet add 1 Tablespoon olive oil and salt and pepper the chicken. Cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate.
  • Add 1 Tablespoon olive oil to the skillet and add the onion and garlic. Sauté for a couple of minutes until tender. Add the tomato sauce, heavy cream, parmesan cheese, and italian seasoning. Salt and pepper to taste.
  • Bring to a simmer and add the chicken back to the skillet. Top with shredded parmesan cheese. Serve over pasta of desired.

Notes

*I like using thin chicken breasts so they cook quickly and evenly.

  3. Dinner tonight was delicious! What a great recipe! I used a jar of marinara instead of canned sauce, it didn’t need extra Italian seasoning. Followed the recipe and OMG this was so delicious and easy to make. All plates were clean:)

  4. This is amazing!!!!!! I didn’t have enough parmesan, just enough to stir in so I topped it with mozzarella and broiled it. It had a delicious cheesy bubbly crust on top that was to die for. All the kids loved it! I made everything else as stated and it was perfect. Don’t know why it won’t allow 5 starts but that’s what I give it.

  5. (For a lighter reduce fat made) CREAMY TOMATO ITALIAN PARMESAN CHICKEN but used roasted pepper tomato soup with 1/2 cup 1% milk and light sour cream and used emolison blender
    Added the fat free parma cheese and it was so delicious. My wife loved it

  8. Haven’t made this yet but would like to. Just a bit confused over one ingredient- “can of tomato sauce” ?? Sauce like you would put on a hot dog? or is it something like a pizza sauce, tomato paste, passata ????

      1. Thanks for that, I think that’s an American product as it’s not something I’m aware of(I’m in Australia) I’ll use a passata which seems to me to be an equivalent.

  9. I made this tonight. Only change was I used 6 chicken breasts and doubled the sauce. I served it with angel hair pasta. It was delicious! My family of 5 devoured it. Will definitely make again!!!

    1. Trudi, I have the same problem because of a different health problem. I went to the SparkPeople site and calculated the calories. This is 270 calories per serving.

  11. Made it tonight. Was excellent. Might have used a bit more of the McCormick’s blend while cooking the chicken but all in all followed the recipe. Good sauce.
