I love everything about summer. But it is sure a busy time. I love finding easy and delicious desserts to put together in a pinch. Since we are always having barbecues and gatherings I love to bring a yummy dessert to share.

I made this pistachio cream pie a few weeks ago and it was AMAZING! I have a slight obsession with pistachios so any pistachio dessert is a winner in my book.

Everything about this dessert was delicious. It starts with a buttery shortbread like base. Then, a creamy pistachio layer goes on top. You top it with some chopped pistachios and there ya go! A quick and easy dessert.

I loved every thing about this dessert! It is creamy and delicious and perfect for summer. I know you guys will love then just as much as we did!

Pistachio Cream Bars

Ingredients 

Instructions 

  • Preheat the oven to 300 degrees Fahrenheit. Line a 9 x 13 x 2-inch pan with aluminum foil or parchment paper for easy removal and set aside.
  • In a medium bowl whisk together 1 ยพ cups all-purpose flour and โ…“ cup granulated sugar. Beat in 1 cup softened salted butter with a hand mixer on low until combined. Press the crust into the bottom of the prepared pan and bake for 30-35 minutes, or until the crust is lightly golden brown on the edges. Remove from oven and let it cool completely.
  • While the crust cools, prepare the pistachio layer by beating 8 ounces cream cheese, and 1 cup powdered sugar together with a hand mixer on medium-speed until creamy. Add in ยพ cup milk and 1 (3.4-ounce) box instant pistachio pudding and continue to beat until smooth.
  • Spread the pistachio cream evenly over the cooled crust and refrigerate for at least 2 hours or until fully set. Top with ยฝ cup roughly chopped pistachios before removing from the pan to slice and serve.

    My grandson loves these & requested for his birthday. My only change is I use 2 packages of pistachio pudding & extra milk.
