Some desserts I make on my blog that I hope everyone will try… this is one of them! I love my cherry pie bars but these were fantastic. They were baked to perfection and I loved the strawberry pie filling swirled throughout in the sour cream. They were so easy to make and that first bite was so creamy and delicious that it gave me hope that spring… and summer is coming!

Ingredients
Crust:
- ยฝ cup unsalted butter, melted and cooled to room temperature
- ยฝ cup light brown sugar
- 1 ยฝ cups all purpose flour
- ยฝ teaspoon baking soda
- ยฝ teaspoon baking powder
- ยผ teaspoon salt
Filling:
- 1 cup strawberry pie filling or any kind you would like
- ยฝ cup sour cream
- ยผ cup granulated sugar
- 1 tablespoon all-purpose flour
- 1 egg
- ยฝ teaspoon vanilla extract
Instructions
- Preheat the oven to 375 degrees Fahrenheit, and prepare an 8x8-inch square pan by lining ti with parchment paper and spraying with cooking spray.
- For the crust, whisk together the flour, brown sugar, baking soda, baking powder, and salt.
- Add the melted butter to the flour mixture and mix until the butter is incorporated and you have a crumbly dough.
- Reserve 3/4 cup of the crust and press the remaining into the bottom of your prepared baking pan.
- For the sour cream filling, mix the sour cream, sugar, flour, egg, and vanilla. Pour the sour cream filling over the crust in your 8x8 pan.
- Spoon the pie filling over the sour cream and gently swirl it with the sour cream filling with a spoon.
- Sprinkle your reserved 3/4 cup crust over the top and bake for 25-28 minutes or until the crust is golden brown.
- Let the bars cool completely and cut into squares.

I just made these tonight – what a coincidence! I agree that they were super easy to throw together and while I knew they were going to taste good (I pride myself on recognizing deliciousness when I see it), I was a little surprised at just how tasty they were. Yum!
