You guys know me and my salmon.  I am o b s e s s e d.  And since salmon can be intimidating to cook for some, one of my favorite ways to cook it is in foil.  I absolutely love this Parmesan Garlic Herb Salmon in foil.  And since making this Grilled Lime Butter Salmon this summer I fell in love with the flavor!

I knew that I wanted to bake a salmon in foil using the same delicious buttery lime combo.  It is simple ingredients that packs this salmon with flavor and the result will blow you away!

This salmon only takes a matter of minutes to wrap it up in the foil.  The foil seals in the buttery garlic lime flavor as it cooks creating the most tender and flaky salmon that you will ever eat.

The best part of it is that the asparagus cooks right along the side of the salmon making even less work for you at dinner.  The asparagus also get the buttery lime flavor and are so perfectly crisp and tender.

Just look at that amazing butter garlic lime on top of the salmon.  It is perfection!

This is an easy but delicious meal that the entire family is going to love!

Serves: 6-8
Ingredients
  • 2 pounds salmon
  • 1 pound asparagus
  • salt and pepper (I like to use coarse)
  • 4 tablespoons butter
  • 2 cloves garlic, minced
  • juice of one lime
  • zest of one lime
  • one lime, sliced (optional)
  • chopped parsley for garnish
Instructions
  1. Preheat oven to 375 degrees. Line a large baking sheet with foil. Lay salmon on top of the foil with asparagus on the side. Salt and pepper.
  2. In a small bowl melt the butter. Add the garlic, lime juice and zest. Pour on top of the salmon. Top with sliced lime if using and bring all of the sides up on the foil and seal the salmon.
  3. Bake for 15-20 minutes and open the foil. Broil for 2-3 minutes to give the top of the salmon a crisp brown edge. Garnish with fresh parsley and serve.
