One of my favorite teenage hangouts – light years ago – was California Pizza Kitchen – affectionately called CPK. Somehow, at CPK, our large, loud, bubbly group always ended up seated in the back corner. And somehow, I always end up with the Thai Chicken Pizza. I wouldn’t have had it any other way.

While I do love CPKโ€™s BBQ Chicken Pizza, their delectable Thai Chicken Flatbread Pizza has my heart. I find its refreshing Thai flavors and complimentary textures absolutely intoxicating. I am thrilled to share my version of CPK with you! Now, YOU can have this pizza whenever your heart desires.

How to Make Thai Chicken Flatbread Pizza

This recipe makes two Thai chicken flatbread pizzas, which I would say serves about 2-4. Two if you are like Patrick and me, and we both NEED our very own pizza. So yeah, you should probably double or triple the recipe.

  1. Preheat oven to 400 degrees Fahrenheit and line a baking sheet with foil. Set aside.
  2. Coconut crema: Whisk theย โ…“ cup coconut yogurt,ย 1 ยฝ tablespoons mayonnaise,ย ยฝ teaspoon honey, andย ยฝ teaspoon lime juiceย together in a medium bowl until smooth. Store in the refrigerator.
  3. Peanut sauce: Whisk theย soy sauce,ย  water,ย  lime juice,ย  fish sauce,ย  brown sugar,ย  sriracha, garlic powder, dry basil, ground ginger, black pepper, and saltย together in a bowl. Add the peanut butter later. Set aside.
  4. Heat olive oilย over high heat in a large nonstick skillet. Add theย 2 chicken breasts, chopped into bite-size pieces,ย and cook just until no longer pink (does not need to be cooked through).
  5. Add the prepared peanut sauce and simmer with the chicken for two minutes. Stir inย ยฝ cup peanut butterย until smooth and completely combined.
  6. Evenly divide the chicken and sauce mixture between theย 2 naan flatbreadsย and spread almost to edges. Evenly divide theย 2 cups shredded mozzarella cheese, thinly sliced red onion,ย ยฝ cup white bean sprouts, andย โ…“ cup matchstick carrotsย on each of the flatbreads.
  7. Bake for 10 minutes, then broil until cheese is golden. Garnish your Thai chicken flatbread pizza withย chopped roasted peanuts,ย chopped cilantro, and coconut crema.

Ingredients 

  • 2 chicken breasts chopped into bite-size pieces
  • 2 naan flatbreads
  • 1 teaspoon olive oil

Peanut Sauce

Instructions 

  • Preheat oven to 400 degrees Fahrenheit and line a baking sheet with foil, Set aside.
  • Coconut crema: Whisk the โ…“ cup coconut yogurt, 1 ยฝ tablespoons mayonnaise, ยฝ teaspoon honey, and ยฝ teaspoon lime juice together in a medium bowl until smooth. Store in the refrigerator.
  • Peanut sauce: Whisk the 1 tablespoon reduced-sodium soy sauce, 2 tablespoons water, 1 tablespoon lime juice, 1 teaspoon fish sauce, 2 tablespoons brown sugar, ยฝ teaspoon sriracha, ยฝ teaspoon garlic powder, ยฝ teaspoon dry basil, ยผ teaspoon ground ginger, ยผ teaspoon black pepper, and ยผ teaspoon salt together in a bowl, the peanut butter will be added later. Set aside.
  • Heat 1 teaspoon olive oil over high heat in a large nonstick skillet. Add the 2 chicken breasts chopped into bite-size pieces and cook just until no longer pink (does not need to be cooked through).
  • Add the prepared peanut sauce and simmer with the chicken for two minutes. Stir in ยฝ cup peanut butter until smooth and completely combined.
  • Evenly divide the chicken and sauce mixture between the 2 naan flatbreads and spread almost to edges. Evenly divide the 2 cups shredded mozzarella cheese, โ…› thinly sliced red onion, ยฝ cup white bean sprouts, and โ…“ cup matchstick carrots on each of the flatbreads.

    1. I used fresh bean sprouts, I haven’t tried it with the canned before but I think those would work fine. If you try it, let me know how it turns out!

  2. Oh wow, this looks fantastic! For most of my family, it’s fine, but there is one who has a life threatening peanut allergy. Normally I would just sub the peanut butter out with almond, but this seems like it relies on the strong peanut flavor. Do you think substitution for this particular recipe would work?

    1. I just came across this recipe, my husband is allergic to peanut so I use sun butter or almond butter to make peanut sauce. You just need to a a little more than what itโ€™s asked for. Taste as you go
