I have never made fudge before. Why you ask? I don’t like fudge. I have said before that I used to hate chocolate. I have grown to like some of it, but I usually don’t like chocolate by itself. So fudge has just never appealed to me. I prefer white chocolate over milk chocolate any day! So when I found this white chocolate fudge recipe AND it had cashews on the top…. this is my kind of fudge!! Making fudge was a lot easier than expected and I loved that it made a lot so that I can give it away for gifts. It was delicious! All of my favorite things in one fudgy yummy place!

Ingredients
- 2 (12-ounce) bags white chocolate chips
- 1 (7-ounce) jar marshmallow cream
- 1 cup unsalted butter, room temperature, divided
- 2 teaspoons vanilla
- 4 ½ cups sugar
- 1 (12-ounce) can evaporated milk
- 6-9 ounces salted cashews
Instructions
- Prepare a 9x13-inch baking dish by spraying it with nonstick cooking spray and lining it with parchment paper for easy release.
- In a mixing bowl add the chocolate chips, marshmallow cream, ½ cup butter, and vanilla. Use a hand or stand mixer to mix the ingredients.
- In a saucepan over medium heat add ½ cup butter, sugar, and evaporated milk. Mix the ingredients and bring to a gentle boil, keep the mixture cooking for 10 minutes, stirring occasionally.
- Pour the hot sugar mixture over the chocolate chip mixture and mix the combination on medium-high speed to whip them together. mix until everything is fully incorporated.
- Pour the fudge into the prepared baking dish, spread the cashews over the top of the fudge, and slightly press them into it.
- Place the finished fuge in the fridge for a couple of hours to set before cutting.
- Once the fudge is ready to cut, run the bottom of the pan under hot water to help release the fudge. Flip the pan over onto parchment paper and cut the fudge into squares.

I’m wondering if I could use half brown sugar to give it a different taste.
Be careful of the cooking time and temp. I cooked at medium low and was skeptical about keeping it on that long. It seemed to be carmelizing so I immediately took it off. The end result was grainy. I should have went with my instinct and took it off even sooner.
What do you mean “hot syrup” ? The stuff you made in the sauce pan?
It is the butter, and evaporated milk mixture that you just made in the pan.

Can you put the cashews on the bottom of your 13 x 9 pan and then press the fudge onto it when done?

I’m wondering if there would be any alternative (s) for marshmallow creme? I’m in newzealand and we don’t have that here I absolutely love the idea of white chocolate fudge with cashews . I would like to try this recipe. Would condensed milk or whipped cream work instead?:( – thanks
Melted marshmallows are a fine substitute for marshmallow creme. Measure by the weight (7 oz), not volume.
I am entering this into the fair. and it doesnt say what size can of evaporated milk. What size should i get.

What do you mean by “cubes” of butter?
Sorry I thought people would know what the term meant. I have gone ahead and changed it. It is 2 sticks and they need to be 1/2 cup each. 🙂

The term “cube” is really only used in the Rocky Mountain states. No one I have spoken with (including myself) heard it used until they lived in Utah, or had simply never heard of it before!
