School is out and it is time for summer fun! I love everything that summer has to offer and we are so excited to have a little baby a part of our family. We have already been grilling like crazy at our house and love to have backyard barbecues and get togethers. Foil packets have become all the craze right now and we love to throw them on the grill. They are also perfect for campouts and nothing beats a foil dinner!
One thing that always is a must at our barbecues is cheese. Bring on the ooey gooey cheese! Cache Valley Cheese has always been our favorite family cheese. These sausage vegetable foil packets would not be complete without the cheese! They were grilled to perfection and ready in no time at all and the cheese was the perfect topping. It just melted right on top and made them absolutely delicious with the melted cheese on top.
All of the flavors came together so wellย and the veggies were cooked so tender. I love how they get just a slight char from the grill or fire and taste so delicious! This is such a delicious combination and the sausage was so delicious. You are going to love everything about these foil packets… especially the cheese on top!

Ingredients
- 12 ounces sliced smoked sausage
- ยพ pound halved baby red potatoes
- ยพ pound trimmed green beans
- 2 cups sliced bell peppers, about 2 whole peppers
- 2 cups diced onion, 1 medium onion
- 2 teaspoons dried oregano
- 2 teaspoons dried parsley flakes
- ยฝ teaspoon garlic powder
- 1 teaspoon paprika
- salt, to taste
- ground black pepper, to taste
- 6 tablespoons cubed unsalted butter
- 2 cups shredded sharp cheddar cheese
Instructions
- Preheat the grill to high heat or the oven to 400 degrees Fahrenheit. Lay out 6 large sheets of aluminum foil and spray them lightly with nonstick cooking spray.
- In a large bowl, toss 12 ounces sliced smoked sausage, ยพ pound halved baby red potatoes, ยพ pound trimmed green beans, 2 cups sliced bell peppers, and 2 cups diced onion, with 2 teaspoons dried oregano, 2 teaspoons dried parsley flakes, ยฝ teaspoon garlic powder, and 1 teaspoon paprika. Season with salt,and ground black pepper, to taste and toss again until everything is evenly coated.
- Divide the sausage and vegetable mixture evenly onto the centers of the prepared sheets of foil.
- Add 1 tablespoon of the 6 tablespoons cubed unsalted butter to the top of the sausage and vegetable mixture on each foil packet.
- Fold the foil over the top of the sausage and vegetables and completely seal the sides of each packet.
- Place the foil packets directly on the grill and cook for 25-30 minutes or bake in the oven for 35-40 minutes, until the vegetables are crisp-tender.
- Remove the packets from the heat and carefully open them. Sprinkle 2 cups shredded sharp cheddar cheese evenly over all of the packets and serve immediately.

Followed the recipe exactly. It was delicious!We like the flavor of the onions and peppers in our food, but not the texture. I cut them into large pieces and piled them on top of the green beans, sausage, potatoes. That way the flavors trickled down, but the onion and pepper pieces were easy to take off the top when finished.
Do the potatoes and sausage get crispy in the oven when cooking in the foil?
Yes, you will just need the temperature up high and make sure you flip the packets over. Great weekend meal! XOXO
