We also love this One Pot Chicken Florentine, but I think that the creamy parmesan rice is what made us fall in love. This dish couldn’t be easier to make. You brown the chicken, dump the rice, stir in some parmesan cheese and heavy cream, and voila! Dinner on the table in less than 30 minutes.
How do you make Creamy Parmesan Chicken with Mushroom Rice?
You start by adding oil to a medium skillet or pot add in seasonings and brown your chicken pieces. As soon as they are brown, you add the rice, mushrooms, and chicken broth. Let it simmer for about 15 minutes or until liquid has absorbed and then stir in your heavy cream and parmesan cheese.
What can I serve as a side dish?
Since this dish already includes rice and mushrooms, a simple side salad and bread make the perfect addition.

Ingredients
- 1 pound diced boneless skinless chicken breast
- 1 tablespoon olive oil
- 1 tablespoon Italian seasoning
- salt to taste
- ground black pepper to taste
- 1 cup uncooked long grain rice
- 2 ยฝ cups chicken broth
- 6 ounces sliced mushrooms about 1 cup
- ยฝ cup heavy whipping cream
- ยผ cup shredded parmesan cheese
Instructions
- Add 1 tablespoon olive oil to a 10 or 12-inch skillet and heat over medium-high heat. Add 1 pound diced boneless skinless chicken breast, 1 tablespoon Italian seasoning, and a pinch or two of salt and ground black pepper to the skillet. Cook for 5-7 minutes, until the chicken is no longer pink and reaches 165 degrees Fahrenheit internally.
- Add 1 cup uncooked long grain rice, 2 ยฝ cups chicken broth, and 6 ounces sliced mushrooms to the skillet. Reduce the heat to medium-low, cover, and let it simmer for 15-20 minutes until the rice is cooked through and tender.
- Stir in ยฝ cup heavy whipping cream and ยผ cup shredded parmesan cheese. Season to taste with salt and ground black pepper. Simmer for 2-3 minutes until the cream has thickened and the cheese has melted. Garnish with more parmesan and fresh parsley, if desired, and serve warm.

Great concept and Iโd really like it but we followed the directions as shown and holy moly! Way too much Italian seasoning! Are you sure 1 tablespoon not 1 teaspoon?

So easy and delicious. I didn’t have heavy cream so I subbed with cream cheese and it was perfect. I also added some fresh spinach at the last few minutes of cooking. Will definitely make again.

This was absolutely delicious and very easy to make! I used Better than Bouillon chicken base, white mushrooms and 10% cream and it turned out really well. This will be a regular dish in our household. would be nice served with a side salad or steamed asparagus to lighten it up.
Is there a way to omit the heavy cream to make it lower in fat?
