Some desserts I make on my blog that I hope everyone will try… this is one of them! I love my cherry pie bars but these were fantastic. They were baked to perfection and I loved the strawberry pie filling swirled throughout in the sour cream. They were so easy to make and that first bite was so creamy and delicious that it gave me hope that spring… and summer is coming!

Strawberry Pie Sour Cream Crumb Bars

You can use any pie filling that you would like in these! They would be yummy with cherry or even blueberry! These are easy to make and I know you will love them just like we did!
Prep Time: 20 minutes
Cook Time: 25 minutes
Total Time: 45 minutes
Servings: 16 Bars

Ingredients 

Crust:

Filling:

Instructions 

  • Preheat the oven to 375 degrees Fahrenheit, and prepare an 8x8-inch square pan by lining ti with parchment paper and spraying with cooking spray.
  • For the crust, whisk together the flour, brown sugar, baking soda, baking powder, and salt.
  • Add the melted butter to the flour mixture and mix until the butter is incorporated and you have a crumbly dough.
  • Reserve 3/4 cup of the crust and press the remaining into the bottom of your prepared baking pan.
  • For the sour cream filling, mix the sour cream, sugar, flour, egg, and vanilla. Pour the sour cream filling over the crust in your 8x8 pan.
  • Spoon the pie filling over the sour cream and gently swirl it with the sour cream filling with a spoon.
  • Sprinkle your reserved 3/4 cup crust over the top and bake for 25-28 minutes or until the crust is golden brown.
  • Let the bars cool completely and cut into squares.

  5. I can’t tell you how many times I’ve made these bars (by request) since June. If I had to guess I’d say at least 5 times. I also used the crumb topping on top of fresh peaches to make a peach crumble. Delish!

  6. Wish you had a print option for your recipes. Don’t want to waste all the ink on pictures that I don’t need to cook!

    1. I do have a print option now that I have moved to WordPress. The problem is I have to go back to all of my old recipes and reformat them into a recipe card with print option. Just haven’t gotten to this one yet. ๐Ÿ™‚

  9. Ok, you win: I will try this! But….can you help me? I can’t find any pie filling where I live (in Italy) so how can I replace it? Just diced strawberries or I need to cook them previously? Mmmm…I’m looking forward to taste these bars!

    1. You won’t regret it! They would also be good with a strawberry jam dropped by tablespoons on top and swirled into the sour cream! ๐Ÿ™‚

  11. If I wanted to use fresh strawberries could I substitute straight across for the pie filling?

    1. I made these tonight with chopped fresh strawberries and they were good but not out of this world. The strawberries blended alot more with the sour cream stuff so it definitly didn’t look like the photo above. I think next time I would thicken the strawberries a little bit. Overall I think it was still a good easy recipe!

      1. Yeah I really liked the strawberry pie filling because it gave it a glaze to it. But I have been also wanting to try it with homemade strawberry jam! ๐Ÿ˜€
