Quick and Easy Taco Soup
Those of you that follow along on Instagram stories saw that I was a part of an amazing bloggerย retreat in Malibu earlier this month.ย The weather was perfect, and we had amazing beach views.ย Andย one of the most magical parts of the retreat was welcoming McCormickย as our sponsor! As you allย know, Iโm lucky enough to have a long-standing relationship with McCormick, and they were kindย enough to come and spend the day with us. Every meal that we had with them that day was soย beautifully set up and we knew that we could count on the food to be delicious and packed withย flavor.ย We are still talking about the AMAZING Berbere Chicken with Roasted Vegetables and Citrusย Broth that they made for us for dinner!
During the day, we had different sessions that taught us how to be Flavor Experts by showing usย how to appreciate the flavor and quality of products! I have always loved and known the amazingย quality of McCormick products, but it was so cool to put it to the test.ย (You guys wouldnโt believe theย difference between McCormick and Competitor in cinnamon; the Saigon Cinnamon blew me away!)
We tested out all kinds of herbs and spices and really learned the ins and outs of each one fromย McCormick,ย including flavor substitutes and other helpful tips and tricks. One of my favorite partsย was seeing the difference between McCormick products and other brands. You could see all of theย physical differences between McCormick and the competitor. The size and vibrancy of the color wasย apparent in each test We all joked that we were going to quit our day jobs and just give out samplesย at the grocery store so that everyone could see the difference for themselves. After learning the careย and details put into everything they produce, all I wanted to do was get cooking! Iโm super excited topartner with them to show you what I learned.
One of the clear takeaways from our time with McCormick is that great-tasting recipes start withย pure, high-quality spices and extracts. McCormick has been a trusted authority on flavor for moreย than 125 years (wow!). One of my favorite seasoning blends to use in the kitchen is McCormickย Taco Seasoning, so I was super excited to test it against competitors. McCormick Taco Seasoning isย free from fillers and is made with simple flavors and high-quality spices (which you can see!). Iโmย telling you, now it is obvious why McCormick Taco Seasoning is my secret ingredient for Tacoย Tuesdays.
Knowing all of this, I was so inspired and I chose to make this amazing cheesy taco soup for you
today to show off the AMAZING flavors in McCormick Taco Seasoning. It is a family favorite and so
easy to make. You just dump in all of the ingredients and it is jam-packed with amazing cheesy,
delicious flavor.
How do you make cheesy taco soup?
- In a large pot over medium high heat, add ground beef. Cook and crumble the brown beef until no longer pink. Drain the grease.
- Add the diced tomatoes, corn, kidney beans, black beans, olives, taco seasoning packet, and beef broth.
- Add in the velveeta cheese OR the shredded cheddar cheese. Stir together and bring to a boil. Reduce heat to medium low and let simmer for 2-3 minutes.
- Serve with your favorite toppings.
Four things you didn’t know about McCormick taco seasoning:
- It is a zesty blend of authentic Mexican Seasonings, including onions and peppers.
- It is a hearty flavor that is not too spicy but warm enough to compliment a variety of meats.
- Contains no added MSG!
- It is available in original, mild, hot, and gluten free.
Can I use cheddar cheese instead of velveeta cheese?
Of course! ย We have no shame when it comes to velveeta cheese. ;). I like that it gives it a smoother creamier feel, but we also have made it with real shredded cheddar cheese. Both are delicious!
Can I use turkey meat instead of ground beef?
Yes you can. ย You can add ground turkey or even ground chicken as a substitute if you would like.

This post was sponsored by McCormick. I love brands that I use in the kitchen for myself. All opinions expressed are my own.
I have this in my crockpot now, smells delicious. Iโm curious if I was supposed to add the juice from the olives as well? I did as it didnโt say to drain them, concerned it will be too salty.
Love all the recipes I try from this site!
Do you drain the cans of tomatoes, corn, etc, or dump them in with the juice?
What kind of olive
I canโt wait to try this. Iโll prob add a packet of ranch seasoning.
This looks amazing! Would it work well in a slow cooker on high? Thank you!
Yes, it will be great in a slow cooker. Just brown your meat ahead of time. Set it on low for 4 to 5 hours or high for 2 to 3 hours long.
How do I double this recipe? I have a large family. Thank you!
Simply double all the ingredients. If you do not have a big enough pot, you can use two or even a slow cooker to help.
This soup is to die for! I made it for a few friends while tucked away in a mountain cabin and we all went crazy over it. I used ground turkey and cheddar cheese (processed cheese is really gross if you think about it) and other than that followed recipe to a t. Yum yum yum!
Quick yummy recipe. Thanks a bunch!! Will make again. ๐
Loved this recipe!!!! Easy to make and great leftovers. This is now in my favorite recipe collection.
Absolutely love this recipe! Weโve made this at least 3 times in the last month. We left out the olives and reduced the cheese and itโs still delicious! We also seasoned the ground turkey while it was browning. We even made this with venison and it turned out amazing. Thanks for another great recipe!!
Does McCormick make a saltree taco seasoning?
I am sure they have it or either something similar! You are welcome to browse their site or check in the baking isle by the seasonings. Enjoy your soup! XOXO
It is very cold and windy here in the Northeast. I was really in the mood for something warm, spicy and hearty. Originally looked at the cheeseburger soup, but scrolled down and found the Cheesy Taco Soup. It is on the stove now, simmering.. So much flavor and easy!! For certain I’ll try the Cheeseburger soup, but when given the choice my husband said “taco”.
New to your website, and glad I found you! Thanks for a great recipe- I’m sure they’re many.
Happy Holidays!
This soup recipe is amazing! I am always looking for new ways to make foods that my boyfriend and I like because he will not try anything new, new. This was perfect for us. He loved it and had 3 servings of it. I will be making again.
I followed the recipe to a T and it didn’t need any adjusting in my opinion!
What a yummy recipe!!! I believe corn belongs in many mexican recipes but is often overlooked. Your recipe does not. Thanks for adding black olives. (Another often forgotten ingredient) This recipe is destined for my “Soup Library”.
