Quick and Easy Taco Soup

Those of you that follow along on Instagram stories saw that I was a part of an amazing blogger retreat in Malibu earlier this month. The weather was perfect, and we had amazing beach views. And one of the most magical parts of the retreat was welcoming McCormick as our sponsor! During the day, we had different sessions that taught us how to be Flavor Experts by showing us how to appreciate the flavor and quality of products! I have always loved and known the amazing quality of McCormick products, but it was so cool to put it to the test. (You guys wouldn’t believe the difference between McCormick and Competitor in cinnamon; the Saigon Cinnamon blew me away!)

We tested out all kinds of herbs and spices and really learned the ins and outs of each one from McCormick, including flavor substitutes and other helpful tips and tricks. One of my favorite parts was seeing the difference between McCormick products and other brands. You could see all of the physical differences between McCormick and the competitor. The size and vibrancy of the color was apparent in each test We all joked that we were going to quit our day jobs and just give out samples at the grocery store so that everyone could see the difference for themselves. After learning the care and details put into everything they produce, all I wanted to do was get cooking! I’m super excited topartner with them to show you what I learned.

today to show off the AMAZING flavors in McCormick Taco Seasoning. It is a family favorite and so
easy to make. You just dump in all of the ingredients and it is jam-packed with amazing cheesy,
delicious flavor.

How do you make cheesy taco soup?

  • In a large pot over medium high heat, add ground beef. Cook and crumble the brown beef until no longer pink. Drain the grease.

  • Add the diced tomatoes, corn, kidney beans, black beans, olives, taco seasoning packet, and beef broth.

  • Add in the velveeta cheese OR the shredded cheddar cheese. Stir together and bring to a boil. Reduce heat to medium low and let simmer for 2-3 minutes.
  • Serve with your favorite toppings.

Can I use cheddar cheese instead of velveeta cheese?

Of course!  We have no shame when it comes to velveeta cheese. ;). I like that it gives it a smoother creamier feel, but we also have made it with real shredded cheddar cheese. Both are delicious!

Can I use turkey meat instead of ground beef?

Yes you can.  You can add ground turkey or even ground chicken as a substitute if you would like.

Easy Cheesy Taco Soup

Ingredients 

  • 1 pound lean ground beef
  • 2 cans diced tomatoes 14.5 ounce (I like to use fire roasted
  • 1 can whole kernel corn 15 ounce, drained
  • 1 can kidney beans 15 ounce, drained and rinsed
  • 1 can black beans 15 ounce, drained and rinsed
  • 1 can sliced olives 4 ounce
  • 1 McCormick® taco seasoning package
  • 1 beef broth 14.5 ounce
  • 1 (16 ounce) Velveeta cheese cubed OR 2 cups shredded cheddar cheese
  • Optional toppings: sour cream cilantro, sliced avocado, tomatoes, tortilla strips

Instructions 

  • In a large pot over medium high heat add the ground beef. Cook and crumble until no longer pink and drain the grease.
  • Add the diced tomatoes, corn, kidney beans, black beans, olives, taco seasoning packet, and beef broth.
  • Add in the Velveeta cheese OR the shredded cheddar cheese. Stir together and bring to a boil. Reduce heat to medium low and let simmer for 2-3 minutes to let the flavors blend and serve with desired toppings.

    I have this in my crockpot now, smells delicious. I’m curious if I was supposed to add the juice from the olives as well? I did as it didn’t say to drain them, concerned it will be too salty.
    Love all the recipes I try from this site!

    1. Yes, it will be great in a slow cooker. Just brown your meat ahead of time. Set it on low for 4 to 5 hours or high for 2 to 3 hours long.

    1. Simply double all the ingredients. If you do not have a big enough pot, you can use two or even a slow cooker to help.

  2. This soup is to die for! I made it for a few friends while tucked away in a mountain cabin and we all went crazy over it. I used ground turkey and cheddar cheese (processed cheese is really gross if you think about it) and other than that followed recipe to a t. Yum yum yum!

    Absolutely love this recipe! We’ve made this at least 3 times in the last month. We left out the olives and reduced the cheese and it’s still delicious! We also seasoned the ground turkey while it was browning. We even made this with venison and it turned out amazing. Thanks for another great recipe!!

  4. It is very cold and windy here in the Northeast. I was really in the mood for something warm, spicy and hearty. Originally looked at the cheeseburger soup, but scrolled down and found the Cheesy Taco Soup. It is on the stove now, simmering.. So much flavor and easy!! For certain I’ll try the Cheeseburger soup, but when given the choice my husband said “taco”.

    This soup recipe is amazing! I am always looking for new ways to make foods that my boyfriend and I like because he will not try anything new, new. This was perfect for us. He loved it and had 3 servings of it. I will be making again.
    I followed the recipe to a T and it didn’t need any adjusting in my opinion!

    What a yummy recipe!!! I believe corn belongs in many mexican recipes but is often overlooked. Your recipe does not. Thanks for adding black olives. (Another often forgotten ingredient) This recipe is destined for my “Soup Library”.
