Cafe Rio {Copycat} Cilantro Ranch Dressing

This is the exact same dressing as Cafe Rio’s.  If I had them side by side I wouldn’t be able to tell a difference.  The site that I got the recipe from had been working to perfect it for a year.  This was absolutely amazing over my Cafe Rio Pulled Pork Salad!

Things that I changed:  I did take the seeds out of my jalepeno so that it wasn’t too spicy.
Things that I would do differently next time: Nothing
Will I make it again? Yes!
Recipe from: Favorite Family Recipes

Ingredients:

  • 1 packet TRADITIONAL Hidden Valley Ranch mix (not BUTTERMILK)
  • 1 c. mayonnaise
  • 1 c. buttermilk
  • 2 tomatillos, remove husk, diced
  • 1/2 bunch of fresh cilantro
  • 1 clove garlic
  • juice of 1 lime
  • 1 jalapeno (we like it SPICY so we kept the seeds in it, if you like it mild, just remove the seeds)
Instructions
  • Mix all ingredients together in the blender. That’s it!

    Just made this today. It is absolutely delicious. Beware, though, if you aren’t a big fan of cilantro like I am the flavor may be a bit strong for you.

  6. I made another version of this recipe tonight and it was so sweet and all wrong. It was missing jalapeno and it added sugar and cayenne. Now I’ve gotta fix it and make it better. Thanks for your awesome blog!
