I decided to make a yummy twist to one of my most favorite and popular soups. I changed a few ingredients and added bacon. Bacon. Bacon took this famous soup to a whole nother level.

This soup makes quite a bit and is enough to feed a crowd. I sent a giant bowl over to our neighbors. I asked my neighbor how the soup was when I saw her that evening. She didn’t seem to know what I was talking about. Her husband ate it all!

This is a must make soup for the cooler months ahead. It is absolutely delicious and creamy with bacon. Did I mention that it has bacon? Oh well it is packed with bacon. 🙂  It is such a hearty soup that the entire family will love!

Bacon Cheeseburger Soup

A delicious hearty and creamy soup that will remind you of a bacon cheeseburger!

Cook Time: 20 minutes
Total Time: 40 minutes
Servings: 6 Servings

Ingredients 

Instructions 

  • In a large pot over medium-high heat, cook the ground beef until it is evenly browned, drain, and set aside.
  • In the same saucepan add 1 tablespoon butter, onion, shredded carrots, celery, parsley flakes, and basil. Cook until the vegetables are tender.
  • Add the broth, potatoes, and cooked beef and bring to a boil. Reduce heat to low, cover, and simmer for 10-12 minutes or until the potatoes are tender.
  • In a separate small skillet over medium-high heat, melt the remaining 3 tablespoons of butter. Whisk the flour into the butter to create a paste.
  • Take 1 cup of the soup liquid and slowly whisk it into the butter and flour paste. once it's incorporated, whisk the mixture into the soup pot.
  • Stir in the cheese, milk, heavy cream, salt, pepper, and crumbled bacon. Cook and stir until the cheese melts. Remove from heat and stir in sour cream.

  1. We omitted the flour and milk, and added 1-1/2 cup heavy cream instead. We also used 1 cup of Costco Kirkland Bacon crumbles in place of the pound of cooked bacon. This soup is a big hit!

  2. I love this soup. I omitted the potatoes, and used beef broth instead of chicken broth since this is a beef soup. I used cream cheese instead of sour cream. I addred garlic powder , brown mustard, and chopped dill pickles.

  4. Thanks for another great recipe! In my husbands words, “I like how much meat there is in it.” It’s so hard to satisfy my family with a soup (which is hard because soup is my go to comfort food) but this one pulled it off.

  5. I found the soup to be a bit too thick and rather bland. To fix it, I added garlic, believe it or not, a squirt of mustard and a couple tablespoons of dill pickle relish. This really seemed to make it more cheeseburger like for me. I also added some additional broth to thin it. The soup was very tasteful after the changes. Over all, I would say It is a good recipe that can easily be made your own. Thanks!

  6. I tend to stray away from soups because they turn out horrible for me. However, I tried this and it came out amazing!! The recipe was quick and easy to follow. The longest part was probably peeling the potatoes (but who really enjoys that). I omitted the bacon initally then after I tasted it threw some in. Bacon definitely takes this soup to a whole new level.
