Salmon foil packets. They are ALL the craze right now. Even though they are the perfect summer meal, I could eat these all year long. With foil packets, you can grill them, bake them, or throw them over a campfire, whatever works for you. Some of my favorite summer memories are going camping with my family and cooking foil dinners over the fire.

My Butter Garlic Herb Steak Foil Packets go viral, so I knew that this butter garlic herb compound had to be put to good use again. I mean, you can’t go wrong with butter, garlic, and fresh herbs, right?

How To Make Salmon Foil Packets

Take a close look at those perfectly cooked salmon fillets and see the buttery garlic and fresh herbs that seep inside the salmon as it cooks, making it tender and adding amazing flavor.

Garlic Herb Butter

  1. Combine: In a small bowl, add softened unsalted butter, freshly chopped parsley, 4 minced garlic cloves, fresh rosemary, thyme, salt, and pepper.

Salmon Packets

  1. Prepare Salmon Filets: Place four 18×12-inch pieces of heavy aluminum foil on the counter, then place salmon filets in the center, and then divide the garlic herb butter evenly over the top of the salmon.
  2. Add Veggies: Evenly place 1 bunch of asparagus, chopped into thirds, 1 chopped red pepper, 1 sliced zucchini, and 1 sliced yellow squash mixture on each piece of foil. Double-fold the top and ends of each piece of foil, leaving space for steam to gather.
  3. Cook: Place packets on the grill and cover. Grill or bake at 400 degrees Fahrenheit for 15-20 minutes or until salmon is cooked through and veggies are tender. Carefully open packets and serve.

Ingredients 

  • 4 (6-ounce) salmon filets
  • 1 bunch asparagus, chopped into thirds
  • 1 chopped red pepper
  • 1 sliced zucchini
  • 1 sliced yellow squash
  • salt and pepper

Garlic Herb Butter:

  • ½ cup softened unsalted butter
  • ¼ cup freshly chopped parsley
  • 4 minced garlic cloves
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon chopped fresh thyme
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

I bought salmon with the intent of making a teriyaki salmon recipe, but when I checked the recipe later it called for “center cut” pieces of salmon, and mine look longer and not very thick…..I didn’t know there were different cuts of salmon, as I just have never bought it before. I think I may have gotten “side cuts”, if I’m remembering correctly from some quick research I did. Could these thinner cuts I bought be used in this recipe?

  2. I am a 84 year old widow living alone. Can I make these up and then freeze 3? Can I cook them frozen or should I thaw them in the refrigerator first. So hard to cook for 1

    So quick & easy to make for a weeknight supper or in advance for camping! Fun for the kids to help make them with whatever mixed frozen (thaw a little first) vegetables they like the best. They love opening the foil packets. A great basic recipe you can change up in a dozen ways to your liking!

    1. Oh, yes! Shrimp and/or chicken tastes great too! The temperature for the shrimp will be a lot less and the chicken would be about the same as the salmon, maybe a little more. It is best to use a meat thermometer for the correct temperature for eating.

    Thanks for sharing! You said you used salmon fillets from a package, were they frozen when you put them in the foil pack?

      I would definitely thaw first since as the package directs if I’m grilling or baking in the oven. Otherwise the recipe would take longer than 15 min and probably not cook evenly. But if I make them for camping I make the packets ahead of time with frozen salmon & veggies & stick them in the cooler. They are thawed by the time we are ready to make them the next day.
