  1. Season: Spray the crockpot with cooking spray. Add the chicken to a large slow cooker, then season with onion powder, garlic powder, paprika, salt, and pepper.
  2. Slow Cook: Add the soup, diced tomatoes and green chiles, onion, and garlic evenly over the chicken. Cover and cook on LOW for 6-8 hours, or on HIGH for 4-5 hours.
  3. Shred the Chicken: Use two forks to shred the chicken.

Ingredients 

  • 3 chicken breasts about 1 ½ pounds
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼-½ teaspoon salt more or less to taste
  • ¼ teaspoon ground black pepper
  • 2 (10.5-ounce) cans condensed cream of chicken soup
  • 1 (10-ounce) can diced tomatoes and green chiles not drained
  • 1 cup diced onion about half a medium onion
  • 2 teaspoons minced garlic about 2 cloves
  • 12 ounces cooked spaghetti noodles
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream

Instructions 

  • Add 3 chicken breasts to a large slow cooker and season with 1 teaspoon onion powder, ½ teaspoon garlic powder, ½ teaspoon paprika, ¼-½ teaspoon salt, and ¼ teaspoon ground black pepper.
  • Add 2 (10.5-ounce) cans condensed cream of chicken soup, 1 (10-ounce) can diced tomatoes and green chiles, 1 cup diced onion, and 2 teaspoons minced garlic evenly over the chicken. Cover and cook on LOW for 6-8 hours, or on HIGH for 4-5 hours.
  • Use two forks to shred the chicken, then add 12 ounces cooked spaghetti noodles, 1 cup shredded cheddar cheese, and ½ cup sour cream, and stir until well combined.

Notes

Leftover Instructions
  • Fridge: Store leftovers in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave in 30-second intervals until fully heated through.
  • Freezer: Not recommended for freezing, as that will change the creamy consistency. 
  • Make Ahead: You may add everything to the slow cooker through step 2, then cover and refrigerate the crockpot insert for up to 24 hours before cooking it.
