Fried rice loaded with ham and veggies that is so delicious it is better than takeout!

My obsession with ham fried rice started at a young age. I was the pickiest eater created! Every time we would go out to eat I would order chicken fingers, even for breakfast. And if we got chinese food, I would order ham fried rice. I would enjoy a big huge bowl to myself and be in ham fried rice heaven.

Luckily I grew out of my picky eater stage and grew to love all sorts of foods. Although it took me 20 years to be able to enjoy a salad. But there will always be a special place in my heart for ham fried rice. I was craving it randomly for lunch. Every time I make my fried rice recipe I am reminded how amazing it is!! With a few little secrets to it, you can have restaurant quality right at home! Packed with ham and delicious veggies this was so incredible. This recipe is easy and makes quite a bit. Even better for me because I will have leftovers for days.

  1. Cook the Ham and Veggies: Heat a large skillet or wok over medium heat. Addย 2 tablespoons sesame oilย to the bottom. Addย 1 cup diced white onion,ย 1 ยฝ-2 cups diced ham, andย 1 cup frozen peas and carrots,ย and fry until tender.
  2. Scramble the Eggs: Slide the ham mixture to one side of the wok and the lightly beaten eggsย onto the other side. Use a spatula to scramble the eggs. Once cooked, mix the eggs with the ham mixture.
  3. Add the Rice and Soy Sauce: Addย the cooked rice and soy sauce to the ham mixture. Stir and fry until heated through and combined. Top chopped green onions, if desired and serve!

Tips and Variations

Fried rice is the perfect recipe to make to your liking! You get to add, delete, and switch up any of the ingredients.

  • Rice Tips:ย I prefer to use a long grain rice when I make fried rice! I find this texture gives me the best results. Short grain tends to be too mushy. Try using jasmine, basmati, or any long grain rice!
  • Use Leftover Ham: This is my #1 tip when planning to make fried rice! Making ham for Sunday dinner? Save the leftovers and make this ham fried rice for a quick and easy dinner later in the week!
  • Veggie Ideas: Load it up with all the veggies! Try adding diced peppers, sautรฉed mushrooms, or zucchini. I also love to add in texture with chopped cabbage!

Storing Ham Fried Rice

This ham fried rice is a favorite at our house so I always make a big batch for leftovers! Serve withย crispy air fryer egg rollsย or theseย chicken potstickersย on the side!

  • In the Refrigerator:ย Transfer to anย airtight containerย and store in the fridge for up to 4 days.
  • To Reheat:ย Reheat individual portions in the microwave. Heat in 1- minute intervals, stirring in between should do the trick!
