What’s in a Breakfast Oatmeal Bar?
These bars use pantry staple ingredients, which I bet you already have. Check out the recipe card at the bottom of the post for the exact measurements.
- Rolled Oats: Providing a hearty texture and a good source of fiber, rolled oats form the base of these bars, offering sustained energy throughout the day.
- Oat Flour: Used to enhance the oat flavor and create a soft, moist texture, oat flour contributes to the overall chewiness of the bars.
- Whole Wheat Flour: Adding a nutty undertone and additional fiber, whole wheat flour complements the oats.
- Salt: The salt enhances the flavors in the recipe.
- Oil: The oil makes sure these oatmeal bars aren’t so dry that they fall apart.
- Maple Syrup: Maple syrup not only sweetens the bars but also provides a delicious taste.
- Brown Sugar: Adding depth and moisture, brown sugar contributes a caramel-like sweetness, complementing the maple syrup for a richer flavor.
- Eggs: The eggs bind the ingredients together in the recipe.
- Vanilla Extract: A splash of vanilla elevates the taste of these oatmeal breakfast bars!
For the Glaze
- Powdered Sugar: Creating a smooth and sweet glaze, powdered sugar adds a silky texture while sweetening the top layer of the bars.
- Real Maple Syrup: This complements the maple thats inside the breakfast bars.
- Milk: This helps the powdered sugar to become smooth and creamy.

- Bake: Bake for 24-28 minutes, until the bars are set and the top is lightly browned. Remove from the oven and set aside to cool.

Oatmeal Breakfast Bars Tips & Variations
I want these oatmeal breakfast bars to turn out perfectly every time. I’ve compiled a few tips and variations you can use to make sure that happens.
- Don’t overbake! Bake these oatmeal breakfast bars just long enough for the center to be set and the edges to barely start turning brown. Let them cool completely before cutting.
- Don’t skip the parchment paper. The parchment paper makes it easy to lift the bars from the pan without sticking to the bottom.
- Make them a small snack: If you prefer these to be more of a snack than a whole breakfast, you can cut them into bite-sized pieces for a smaller breakfast snack!
- Make the glaze thinner: If you prefer a thinner glaze, add milk one teaspoon at a time until it’s thin enough to pour a thin layer over each bar.
- Toppings: Instead of the glaze, try drizzling honey, chocolate, and peanut butter over the top. You can also add some shredded coconut, chocolate chips, bananas, dried cranberries, and raisins. Or nuts like sliced almonds, pecans, and cashews to make these bars different every time!
How to Store Oatmeal Breakfast Bars
- At Room Temperature: Store leftover bars in an airtight container at room temperature for up to 5 days.
- In the Freezer:ย Once the bars have been cooked, cooled, and cut, it’s best to lay them on a parchment-lined baking sheet and freeze them for 3-4 hours until the bars are frozen solid. Once frozen, transfer them to a freezer plastic bag or airtight container. You can freeze for up to 3 months. When you are ready to enjoy them, let them thaw at room temperature for a few hours.

This recipe was so easy and fantastic! I followed the recipe for the glaze but added one tablespoon of freshly ground peanut butter. Everyone loved these breakfast bars Especially my grandchildren.
Weโve made these a few times already and they are SO good. The kids love them too. Such an easy and whole snack. Thank you!!
I would like to try these. Do you think dried fruit could be added to the mixture before baking?
I think that would work out great!
Could these be made w/just a/p flour. I dont have the other kind. I know wont be as healthy
I don’t think the texture would turn out as well. The oat and wheat flour give it the perfect nuttiness. ๐
Hi, you can easily make oat flour by grinding oatmeal oats in a food processor. I do this for homemade oat milk.
What those of oil do you recommend? I like to stay away from veg. and canola.
Coconut oil will work great!
Just OK. Rather dry and bland, even with added cinnamon. I did not make the glaze which is apparently needed to provide some flavor, maybe some moisture. It is a convenient way to have oatmeal on the go, just be prepared for the resulting crumbles.
