Sautéed Brown Butter Garlic Rainbow Carrots

I love finding delicious new side dishes to go with dinner.  I recently discovered these rainbow carrots at the grocery store and I love the vibrant color they add to the dinner table.  I make them at least once a week because they are so easy and full of delicious flavor!

It is amazing how much flavor brown butter adds to a dish.  It only takes a few minutes more to brown the butter to give it that extra nutty flavor.  The carrots get sautéed to tender buttery garlic perfection.  I added a red onion for a little more flavor and it is so simple to make.  It is ready in just a matter of minutes.  I love the pop of vibrant color it adds to your dish and is sure to be hit with the family!

Ingredients
  • ¼ cup butter
  • 2 cloves garlic, minced
  • 6-8 rainbow carrots, sliced*
  • ¼ cup red onion, chopped
  • salt and pepper to taste
Instructions
  1. In a medium sized skillet add the butter. Cook over medium heat and whisk the butter to brown. It will become frothy and start to have a nutty aroma. Then it will turn brown.
  2. Add the garlic, sliced carrots and red onion. Sauté for about 5-7 minutes until they become soft and tender. Salt and Pepper to taste.
Notes
*If rainbow carrots aren't available at your grocery store regular carrots will also work great.
