I love finding delicious new side dishes to go with dinner. I recently discovered these rainbow carrots at the grocery store and I love the vibrant color they add to the dinner table. I make them at least once a week because they are so easy and full of delicious flavor!

It is amazing how much flavor brown butter adds to a dish. It only takes a few minutes more to brown the butter to give it that extra nutty flavor. The carrots get sautéed to tender buttery garlic perfection. I added a red onion for a little more flavor and it is so simple to make. It is ready in just a matter of minutes. I love the pop of vibrant color it adds to your dish and is sure to be hit with the family!

Sautéed Brown Butter Garlic Rainbow Carrots

Vibrant colored rainbow carrots get sautéed in brown butter and garlic creating a delicious side dish. They are so tender and flavorful and will become a favorite new side.
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
Servings: 6 Servings

Ingredients 

  • 1/4 cup butter
  • 2 cloves garlic minced
  • 6-8 rainbow carrots sliced
  • 1/4 cup red onion chopped
  • salt and pepper to taste

Instructions 

  • In a medium sized skillet add the butter. Cook over medium heat and whisk the butter to brown. It will become frothy and start to have a nutty aroma. Then it will turn brown.
  • Add the garlic, sliced carrots and red onion. Sauté for about 5-7 minutes until they become soft and tender. Salt and Pepper to taste.

Notes

If rainbow carrots aren't available at your grocery store regular carrots will also work great.
