Hey hey it’s Tiffany from Creme de la Crumb! It’s no secret I’m a little bit obsessed with my slow cooker – or I should say slow cookers because I think I have five of them??? I just got a new one for Christmas and I’m so excited about it, I use my slow cookers several times a week and when we are having a family get together I usually have a few in use at the same time.

This is a great go-to weeknight staple dish. I love the flavors, it’s really healthy, and I never get tired of chicken or potatoes. The best part? It’s chicken AND potatoes made in one dish at the same time. It’s awesome! Even picky eaters are a fan of this simple crockpot meal. I hope you enjoy it as much as my family does!

Slow Cooker Herbed Chicken & Potatoes

Slow Cooker Italian Chicken and Potatoes is such an easy meal to make but packed with such amazing flavor! The entire family will love this hearty meal in one.

Cook Time: 4 hours
Total Time: 4 hours 10 minutes
Servings: 4

Ingredients 

  • 4 boneless skinless chicken breasts or 4-6 chicken thighs
  • 3 cups chopped potatoes about 1 1/2 inch pieces
  • 3 tablespoons oil
  • 1 tablespoon Italian seasoning blend
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • fresh herbs for garnish optional

Instructions 

  • In a large bowl combine chicken and potatoes. Drizzle with oil and stir to coat. Sprinkle salt, pepper, garlic powder and Italian seasoning over the chicken and potatoes, then toss to coat well.
  • Transfer to slow cooker (OR optional step: cook chicken and potatoes in a large skillet pan over medium high heat for 2-3 minute to brown before transferring to slow cooker to cook all the way through), cover and cook on low for 4-6 hours until chicken is cooked through and potatoes are fork tender.
  • Garnish with fresh herbs like oregano and thyme (optional) and serve hot.

    I used very large chicken breasts, added a half a cup of chicken broth, and then cooked them with the potatoes for four hours, the chicken came out perfectly. It was moist and falling apart. The potatoes were perfect as well. My husband and I spilt a chicken breast because they were so big. I plan to use the left overs for chicken salad. This is a great recipe, but you do need to add chicken broth. This is definitely a keeper.

  2. I liked the simplicity of the recipe. I did not use chicken broth like everyone was suggesting. It is very good, but i agree it may need to be cooked on high because of the potatoes. Has anyone cooked this on high?

    I liked the flavor. But I don’t know how anyone got this done in the time suggested on low. Started it just before 2 and by 7:30 the chicken was done but the potatoes were still raw. I like it enough to make again, but next time will set my crock pot on high. I gave it four stars for the flavor. The time goof was my fault. I’ve been cooking long enough to know better than to expect it would be done.

  5. I made this tonight as written and it was amazing! The house smelled so good all day and even the next day!! Hubby walked into the house after being out of town and smiled and said it’s good to be home! Thanks for sharing this one it will become a fav. in our house.
    P.S. it’s even as good warmed up!!

  7. Found this site a little late …. searching for slow cooker chicken recipes. I froze a package of chicken breasts (maybe 6-8) and want to put them in the crock pot so my son and daughter-in-law have dinner ready when they get home from vacation this week. I will only put in chicken – they won’t want the potatoes. The spices sound good but I think I will add the chicken broth that others recommend. Do you have any updates to this recipe that are different from when you first posted it?

  9. Can I use broth from a can of chicken noodle soup? Is it imperative to mix everything in a bowl or can I do it in crock pot?
