How To Make Salmon Foil Packets
Take a close look at those perfectly cooked salmon fillets and see the buttery garlic and fresh herbs that seep inside the salmon as it cooks, making it tender and adding amazing flavor.
Garlic Herb Butter
- Combine: In a small bowl, addย softened unsalted butter,ย freshly chopped parsley,ย 4 minced garlic cloves,ย fresh rosemary,ย thyme,ย salt,ย andย pepper.
Salmon Packets
- Prepare Salmon Filets: Place four 18×12-inch pieces of heavy aluminum foil on the counter, then placeย salmon filetsย in the center, and then divide the garlic herb butter evenly over the top of the salmon.
- Add Veggies: Evenly placeย 1 bunch of asparagus, chopped into thirds,ย 1 chopped red pepper,ย 1 sliced zucchini, andย 1 sliced yellow squashย mixture on each piece of foil. Double-fold the top and ends of each piece of foil, leaving space for steam to gather.
- Cook: Place packets on the grill and cover. Grill or bake at 400 degrees Fahrenheit for 15-20 minutes or until salmon is cooked through and veggies are tender. Carefully open packets and serve.

Ingredients
- 4 (6-ounce) salmon filets
- 1 bunch asparagus, chopped into thirds
- 1 chopped red pepper
- 1 sliced zucchini
- 1 sliced yellow squash
- salt and pepper
Instructions
- Place four 18×12-inch pieces of heavy aluminum foil on counter. Place 4 (6-ounce) salmon filets in the center and evenly place 1 bunch asparagus, chopped into thirds, 1 chopped red pepper, 1 sliced zucchini, and 1 sliced yellow squash mixture on each piece of foil. salt and pepper.
To make the garlic herb butter:
- In a small bowl add ยฝ cup softened unsalted butter, ยผ cup freshly chopped parsley, 4 minced garlic cloves, 1 teaspoon chopped fresh rosemary, 1 teaspoon chopped fresh thyme, ยฝ teaspoon salt and ยผ teaspoon pepper. Divide evenly and place on top of the salmon. Double fold top and ends of each piece of foil, leaving space for steam to gather.

This recipe is excellent!! I made it last night, and served it with rice. The only change was I added a couple shakes of red pepper flakes to the herb butter, because my husband likes everything with a little kick to it. Everything was cooked to perfection in 20 minutes and was very tasty. I’ll definitely add this to my recipe collection!
