I decided to make a yummy twist to one of my most favorite and popular soups. I changed a few ingredients and added bacon. Bacon. Bacon took this famous soup to a whole nother level.
I hadn’t made this soup since last winter. Totally forgot how amazing it was. This soup makes quite a bit and is enough to feed a crowd. I sent a giant bowl over to our neighbors. I asked my neighbor how the soup was when I saw her that evening. She didn’t seem to know what I was talking about. Her husband ate it all!
This is a must make soup for the cooler months ahead. It is absolutely delicious and creamy with bacon. Did I mention that it has bacon? Oh well it is packed with bacon. 🙂 It is such a hearty soup that the entire family will love!

Ingredients
- 1 pound ground beef
- 1 pound bacon, cooked and crumbled
- 4 tablespoons unsalted butter, divided
- ¾ cup chopped onion
- ¾ cup shredded carrots
- ¾ cup diced celery
- 1 teaspoon dried parsley flakes
- 1 teaspoon dried basil
- 3 cups chicken broth
- 4 cups peeled and diced potatoes, about 3-4 large potatoes
- ¼ cup all-purpose flour
- 2 cups shredded cheddar cheese
- 1 cup milk
- ½ cup heavy cream
- 1 teaspoon salt
- ½ teaspoon pepper
- ¼ cup sour cream
Instructions
- In a large pot over medium-high heat, cook the ground beef until it is evenly browned, drain, and set aside.
- In the same saucepan add 1 tablespoon butter, onion, shredded carrots, celery, parsley flakes, and basil. Cook until the vegetables are tender.
- Add the broth, potatoes, and cooked beef and bring to a boil. Reduce heat to low, cover, and simmer for 10-12 minutes or until the potatoes are tender.
- In a separate small skillet over medium-high heat, melt the remaining 3 tablespoons of butter. Whisk the flour into the butter to create a paste.
- Take 1 cup of the soup liquid and slowly whisk it into the butter and flour paste. once it's incorporated, whisk the mixture into the soup pot.
- Stir in the cheese, milk, heavy cream, salt, pepper, and crumbled bacon. Cook and stir until the cheese melts. Remove from heat and stir in sour cream.

I’ve made this many times now, and I absolutely love it. Friends request that I make it when they come over. It’s so comforting. It has a lot of flavor. I can make it with very basic ingredients that I tend to have on hand. It’s a real winner. Thank you for sharing this recipe.

I made this soup with minor tweaks (veggies) instead I used dried ingredients with the exception of onions. MY FAMILY LOVED IT, including my husband who is a very picky eater. Thank you for sharing!

I decided to review this recipe only because I made the Cheeseburger Soup recipe from this site
and in my review gave it 4 stars because it was “missing something” and that was BACON! So realizing this is pretty much the same recipe with the addition of bacon I felt at liberty to give this recipe 5 stars and a review. The only change I would make is to use some of the bacon grease (that is if you are frying your own) to cook your veggies in, instead of the butter, it will bump the flavor up even more. A really tasty, hearty, soup everyone enjoyed. I will make it again. Thank you.
This is a phenomenal recipe! I probably made this 5 to 10 times everybody loves it and the bacon just makes it a million times better!
