Why This Cabbage Roll Casserole Crushes the Rest

  • Easy Casserole Version: This is everything you love about cabbage rolls, layered into a casserole, no rolling or stuffing required.
  • Sneaky veggie win: The mix of flavors in this is so delicious, your kids wonโ€™t even realize theyโ€™re eating veggies (yes, even the cabbage).
  • Hearty, cheesy, and totally satisfying: Loaded with seasoned beef, rice, marinara, and melty cheese, it keeps everyone full and happy.

Cabbage Casserole Ingredients

  • Beef: I love using lean ground beef to make this meal healthier for my family. You can also use ground turkey, sausage, or a combination.
  • Rice:ย I prefer long-grain white rice in this recipe. Using premade packaged rice makes the prep even easier. Feel free to use brown rice or cauliflower rice as a gluten-free option.
  • Cheese: Our family loves melty Colby-Jack, but you can use cheddar instead. If you prefer, you can also skip the cheese altogether.

How to Make Easy Cabbage Roll Casserole

What I love about this cabbage roll bake is that I donโ€™t have to roll the cabbage. I just throw everything together and still get all the amazing flavor, minus the work.

  1. Cook Meat Mixture: Preheat the oven to 350 degrees Fahrenheit. In a large skillet over medium heat, add the olive oil, ground beef, and minced onion. Cook until the meat is no longer pink and the onion is softened. Add the garlic, Italian seasoning, dill, salt, and pepper. Stir and cook for 30 seconds. Add the marinara sauce, diced tomatoes, and cooked rice.
  2. Simmer: Stir until combined and continue to cook until warmed through.
  3. Precook the Cabbage:ย In a large pot, add the butter and cabbage. Cook on high heat until the cabbage is barely wilted and browned.
  4. Assemble the Casserole: To assemble the casserole, layer half of the cooked cabbage in the bottom of the casserole dish.
  5. Next Layer: Evenly layer half of the beef mixture on top of the cabbage, followed by 1 cup of shredded cheese. Repeat the layers one more time.
  6. Bake and Enjoy:ย Bake for 20-25 minutes until hot and bubbly. Garnish cabbage roll casserole with fresh parsley and enjoy!

Alyssa’s Pro Tip

Cabbage:ย Donโ€™t skip precooking the cabbage. It releases excess water so your cabbage roll casserole isnโ€™t soupy. Drain it well and blot with paper towels if needed.

How to Enjoy Leftovers

Leftovers are the gift that keeps on giving, and this cabbage roll casserole is even tastier the next day for lunch!

  • In the Refrigerator: Store your casserole in the fridge for up to 3-4 days in an airtight container for the best freshness.
  • In the Freezer: Freeze in an airtight container for up to 2 months, thaw in the fridge overnight before reheating.
  • To Reheat: Microwave with a damp paper towel in 1-2 minute intervals, stirring until heated through. For a crispy topping, cover with foil and bake at 350ยฐF for 15-20 minutes. Enjoy! You can take the foil off to brown the cheese if you prefer.

    1. Yes! In a large skillet over medium-heat, add the olive oil, ground beef, and minced onion. Cook until the meat is no longer pink and the onion is softened. Add the garlic, Italian seasoning, dill, salt, and pepper. Stir and cook for 30 seconds. Add the marinara sauce, diced tomatoes, and *UNCOOKED* rice and 1/3 cup of water. Stir until combined. Spray the bottom and sides of a crockpot with pan spray before layering the meat mixture with the chopped cabbage in it. Cover and cook on low heat for 4 hours. Before serving, top with cheese and cover for 5-10 minutes, until the cheese is melted. Top with parsley
