Cajun Shrimp and Sausage Vegetable Foil Packets

After I made this delicious Cajun Shrimp and Sausage Skillet,  I knew that a foil pack of this had to be made! Our family LOVED the cajun shrimp and sausage skillet so much and I might have loved it even more because it was so dang easy. Foil packets are all of the rage right now and I knew this one would be delicious.

Foil packets are such a great meal in one with easy clean up. They are great gilled, baked, or cooked over a campfire. The great thing about the shrimp and sausage combo is that they cook quickly and are ready to devour in no time at all.

The shrimp and sausage combo is amazing but it is even better surrounded by crisp and tender summer vegetables. I love using zucchini, banana squash, asparagus, and bell peppers. They all cook together quickly.

These really are so easy to just chop the veggies, add the shrimp and sausage and toss in cajun seasoning. I love easy meals lately and you do not have to compromise on taste or flavor to get big bold flavor in these foil packets!

I baked mine this time but I usually grill my foil packets or cook them over a fire. Since I am pretty serious about losing the baby weight now, they make great meal prep. It is a healthy and delicious summer meal that I know you guys are going to love.

Cajun Shrimp and Sausage Vegetable Foil Packets

Cajun Shrimp and Sausage Foil Packets are loaded with shrimp, sausage, summer vegetables and tossed in cajun spices. These are quick and easy and packed with big flavor!

Servings: 4

Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 14 ounce pork or chicken sausage sliced
  • 2 medium sized zucchini sliced
  • 2 medium sized yellow squash sliced
  • ½ bunch asparagus sliced into thirds
  • 2 red bell pepper chopped into chunks
  • Salt and Pepper
  • 3 Tablespoons olive oil
  • 3 Tablespoons Cajun Seasoning

Instructions
 

  • In a large bowl add the shrimp, sausage, zucchini, yellow squash, asparagus, bell pepper and salt and pepper. Add olive oil and cajun seasoning and toss until coated.
  • Place four 18x12-inch pieces of heavy aluminum foil on counter. Place the shrimp and sausage mixture in the center of the foil. Double fold top and ends of each piece of foil, leaving space for steam to gather.
  • Place packets on the grill and cover. Grill or bake at 400 degrees for 15-20 minutes or until shrimp and vegetables are cooked through. Carefully open packets and serve.

  1. These are delicious! I made them last night and my husband and I both loved them. I added garlic powder to ours along with the other seasonings and I used smoked sausage so the sausage was already cooked. I too wondered how they would all cook at the same time but with the sausage being cooked that I used it took exactly 15 minutes and had this yummy broth which we put over the mixed grain rice. Looking forward to making again and trying the foil packet way. Thanks for sharing your recipes!

  2. The recipe does not call for pre cooking the veggies but in one of the comments it says they are precooked? Can you provide more info? Thanks!

    1. No, precooking! It will all cook in the foil. You are welcome to precook everything if wanted and then basically heating it up when you are camping or at your home. That is the great thing about foil packets! Enjoy! XOXO

    OMG.. that Cajun Shrimp and Sausage was some spicey stuff. I got a “Mom you need to make this again”!!
    I did over cook my pouches, my veggies were to soft. I was cooking on the grill and went over about 5 minutes or so.
    This is my 3rd recipe that we tried and we will make all 3 again

  5. I made this last night. Love it but I made it too hot. I like spicy food so of course added too much spice. The recipe says it feeds 4 people so I doubled it. Made way too much.

    1. AManda you cannot use cocktail shrimp or cold shrimp that’s ready to eat. I asked the butcher at my store cuz I wondered same thing. He said if u use cocktail shrimp it will get hard and not be good. So you should use the raw kind. I’m trying it today.

    I made this a couple of nights ago and it was AMAZING!! I will definitely be making this again and experimenting with other foil pack recipes. Remember, Cajun seasoning is spicy but delicious so season according to your taste. I completely sealed my packets and baked 20 minutes and everything was cooked PERFECTLY! Thank you for sharing the recipe.

    1. Hi Candace, I do not like very spicy food. When chips and salsa i always choose the mild. I just don’t do well with hot stuff. In making the Cajun Shrimp and Sausage how much of the cajun spices would suggest I use.

    1. Great idea! Throwing them over the camp fire is perfect and flipping them periodically. It will take a little longer unless you wanted to prep and cook them ahead of time and then reheating them over the fire. That is a quicker way to cook them.   7. Hi :)) this looks amazing and I will try it on Saturday. Wondering what herb you garnished with. The photo has a little green garnish? Also… did you sear it on the grill at any point?
