Delicious Cinnamon Roll Pancakes

As I was making this delicious cinnamon roll pancake creation I thought to myself… why haven’t I made these until now? A pancake swirled with cinnamon sugar and an amazing cream cheese glaze on top. Doesn’t get much better than that!

I knew my kids would just go nuts over these pancakes. So I doubled the recipe and made a big batch. I am going to freeze some for my boys so they can be heated up before school. I know best mom ever! Heres the problem, only 3 made them in the freezer. They were so amazing my boys couldn’t get enough! Then my boys wanted a bedtime snack and heated up the rest. So I am left with zero. That is okay though. It gives me an excuse to make these pancakes again. My boys said they were the best thing ever. They especially loved the cream cheese glaze on top!

These cinnamon roll pancakes are so simple to make. To make them even easier substitute the homemade pancake recipe for your favorite pancake recipe from a box. It will still have the same great flavor with the cinnamon roll filling circled over the pancake mix. These pancakes are a huge hit and won’t last long. A delicious cinnamon roll in the form of a pancake that the whole family will love!

How to make Cinnamon Roll Pancakes:

  1. To make the cinnamon filling: Combine brown sugar, melted butter, and cinnamon in a medium size bowl. Scoop into a baggie and set aside.
  2. For the glaze: In a small pan melt the butter over low heat. Whisk together the cream cheese, vanilla and powdered sugar. Take off of the heat and set aside until ready to use on pancakes.
  3. To make the pancakes: Combine flour, baking powder and salt. Whisk together the milk, egg, and oil.
  4. Heat skillet to medium low: Once preheated, spray with non-stick spray. Add about 1/2 cup of the batter to the skillet. Wait until bubbles start to form. Snip the corner of the cinnamon filling, and create a swirl pattern in the center of the pancake as pictured above. See notes. Be careful not to get it too close to the edge. With a wide metal spatula flip the pancake over and continue cooking for an additional 1-2 minutes until golden brown.
  5. Clean the pan: Wipe out the pan each time and repeat with the remaining batter. Warm the glaze if needed and drizzle over pancakes.

Tips on Making Cinnamon Roll Pancakes:

  • Stir cinnamon filling: Before using the cinnamon filling mixture to swirl on top of the pancakes, open up the bag and re-stir to make sure that the butter is fully incorporated.
  • Griddle or skillet: Use a nonstick skillet or griddle when making cinnamon roll pancakes. These pancakes tend to stick a little a bit with the cinnamon roll filling.
  • Cinnamon filling: This is best if it is a thick texture. If it is too thin the cinnamon filling will run in the pancake.
  • Bubbles: Once the cinnamon roll pancakes begins to have several small bubbles over top, flip your pancake using a thin spatula.

I have never left a negative comment or rated a recipe low for any of the hundreds of recipes I have tried on the internet. This recipe is really disappointing. The pancake batter is very runny, there is no way with this flour ratio you are getting fluffy pancakes like the picture. The filling for the pancakes is also runny and runs all over the pan. I even thickened the filling so when I piped it and it got hot, it didn’t run but then upon flipping the pancake over the sugar burns on the pan and completely ruins the pancake. I tried making this recipe 2 different times to get it to work and it was hopeless. The pancakes didn’t even taste good 🙁

I have made these pancakes for several years now. My kids LOVE them. I even use the cinnamon filling and glaze on waffles. Cleaning the waffle iron afterwards is worth it.

Oh, my goodness!!! These were absolutely AH-MAZING!! My boys and I are home for snow day #3 so I was looking for a new recipe to try out for breakfast. These were absolutely delicious! Not sure I can eat regular pancakes ever again. I did cheat and used Bisquick for the pancake base! I cook smarter, not harder. Thank you for the delicious recipe! I’m sure it will be a request for Brupper, too!

I love this recipe it’s perfect! I wish I could share a pic bc my first two pancakes were a flop but the last two perfection! Cooking takes time and practice people lol it’s not the recipe it’s YOU. Btw for people who are saying it’s too sweet, here is a tip, stop pouring the glaze lmao! The pancake with the swirl is sweet as is so take it easy on the glaze 😂 if she made a smaller glaze portion people would complain it’s not enough omg 😆

The best pancakes & glaze ever! These are highly requested by my family! To save time, I mix the cinnamon filling into the pancake batter.

  6. The cinnamon swirl is a nice visual gimmick but to avoid burnt sugar issues I am going to add cinnamon and pecans to pancake batter and use glaze on top for ssme flavor profile. Thanks for the idea!!!

  7. I love this recipe. I was looking for recipes to change the paleo mixture that I have for pancakes. The only thing I change its because I only made half of the recipe, the icing got a little bit thicker, so I add a TB of milk, and it was great. My boyfriend love this recipe. Definetely trying this again.

This was so good instead of making the pancake batter I just used boxed and it’s amazing I messed up with the filling when trying to make it a swirl but the glaze covered that it’s so sweet but in a good way and I love it!!!! Thanks so much for this

  9. I made these today and my family loved them. A little filling would drip out when flipped but I just kept spraying pan after each pancake and it was no trouble.

    1. I don’t think it would work with waffles, since you close the lid and cook both sides at once. But make the filling and squirt some on top of your waffle! That would be great! We usually drizzle the leftover filling on top of the pancakes as an extra sweet treat!

  10. I have made these many times for my boyfriend and he asks for them at least every few weeks- i think these are they are the best pancakes I’ve ever had too. Such a creative idea to swirl the brown sugar cinnamon mixture onto the pancake..i can’t really understand why people are having such a difficult time with it. Thanks Alyssa! Keep up the good work!!

    1. Kelsi!!

This is so good to hear. Thanks for the comment and for the kind words. I really like them as well. Thanks for following along with me!

  11. Cinnamon goes everywhere but into the pancake. It almost would be better if just mixed with the batter and incorporated into it. Otherwise we just got gross soggy cinnamon butter pancakes. Soggy pancakes are just blasphemous.
