Garlic Butter Herb Steak Bites with Potatoes
My steak-loving son is always begging for steak every single week. He loves steak and potatoes, and I love easy meals, so it is a win-win situation! This meal is so delicious, though, that everyone loves it, even those who normally prefer chicken or pork.
These small steak bites are covered with a delicious buttery garlic herb sauce that brings the most delicious flavor. It makes my mouth water just thinking about it! Plus, this is a one-skillet meal which means that since everything is cooked in the same pan, you get a blend of all of the flavors all at once. Trust me because this isn’t a recipe that you want to miss!
Ingredients in Steak Bites
These garlic butter herb steak bites pack a punch with the flavor, and yet achieving that delicious taste is so easy! Check out the recipe card at the bottom of the post for all of the exact measurements.
- Olive Oil: You will cook the steak and potatoes in this.
- Butter: I used unsalted butter in this recipe.
- Yukon Gold Potatoes: Once you slice these up into quarters, then they will be the perfect size to complement the steak bites.
- Garlic Cloves: You can use minced garlic if you don’t have fresh garlic cloves on hand. 1/2 teaspoon equals about 1 clove of garlic.
- Dried Thyme, Rosemary, and Oregano: These dried herbs bring together a delicious aroma of flavors.
- Sirloin Steaks: The better the cut of steak, the better your meat will turn out!
- Salt and Pepper: These enhance all of the flavors in the steak bites.
Let’s Make Garlic Herb Butter Steak Bites
- Cook the Potatoes: Heat a large cast iron skillet over medium-high heat and then add olive oil and butter, potatoes, garlic, thyme, rosemary, and oregano. Cook for about 3 minutes, stir, and cook an additional 3 minutes until fork tender. Remove and set aside on a plate.
- Add Steak: Turn the skillet to high heat. Add the steak bites. Let the steak sear for a minute, and then continue to stir the steak until they are golden brown.
- Garnish: Top the steak with fresh chopped herbs (optional).
Do I have to use Sirloin Steak?
No! You can use other steaks in this garlic herb and butter steak bite recipe. You can substitute with a tenderloin, or New York strip steak.
Storing Leftovers
These garlic herb and butter steak bites make delicious leftovers, and I love having them for lunch or dinner the next day! You can store leftover steak bites in an airtight container in your fridge for 2-3 days. Then, when you are ready to reheat them, cook them in a skillet on low until they are heated through.

This is a wonderful base recipe! Thank you for sharing! I’ve used it a dozen or so times over the last year, especially when camping (using griddle) and it’s amazing every time! We’ve deviated from salmon to gnocchi, added veggies like onions and zucchini and and peppers (red, yellow, orange and green). Agree that potatoes need a tad longer but really? Just eat one and you’ll know when it’s ready!

Well my potatoes burned and they needed a lot longer then 6 min.
I made this tonight I raised the potatoes for 15 min and then followed the directions. It was yummy. Definitely will make this again. Thank you for the recipe.

Delicious but hilarious that the recipe says potatoes are going to he cooked in 6 minutes. Maybe if they’re 5mm thick!
Finally….a meal everyone ate! I think I’m the only one who was critical but of course, aren’t we always our own worst critics? I had to use my cast iron grill pan but it worked. (And now I have a new method for cooking my breakfast potatoes!) The meal could have used more depth of flavor and that is my biggest critique. Not sure what to add – garlic powder? I don’t want to add onions. Perhaps a tad more salt? Overall, it was awesome! All 3 of children ate most of it and 1 returned for 2nd helpings. I was pleased as punch.

Tasty & full of flavour, great mid week recipe. The whole family enjoyed it and that’s no mean feat. I used new potato’s which needed to be par boiled, but worked so well. Definitely make this again ๐๐
I cut my potatoes and steak add the same ingredients and put everything in a sheet pan and bake at 375 for 45 minutes and itโs wonderful and in the summer time I throw it on the grill in foil packs and cook about 30 minutes
5 stars I like sirloin steak
Loved the steak bites but my potatoes took about 30 minutes to actually cook and the garlic burned! The potatoes were inedible unfortunately. Next time Iโll roast the potatoes and make the steak in the cast iron skillet.

Could sweet potatoes be a substitute for yukon potatoes?
Yes, it will cook up a little quicker.
My family loved this recipe. Even my picky eater devoured a second helping. Iโm floored! I did use dry vs fresh herbs so used only 1/2 teaspoon of each.
I made this tonight and it was delicious…didnโt have a cast iron pan so I used my wok๐คทโโ๏ธ Turned out well…Iโm laughing now, because I added a chopped onion….my recipe had several pictures of an onion being cut (apparently an add for a knife sharpener)…so I cut one during prep and used it rather than waste it๐
