  • Want to add mushrooms? Cook them first in a bit of butter until their liquid evaporates. Then add the garlic, herbs, and potatoes. This keeps the pan from getting too wet, which would prevent the steak from searing properly.

  1. Cook Potatoes: Heat a large cast iron skillet over medium-high heat, then add olive oil, 1/2-inch cubed Yukon gold potatoes, garlic powder, and season with salt and ground black pepper. Cook for about 5 minutes before stirring. Continue to cook for an additional 10-15 minutes, stirring occasionally, until the potatoes are fork tender. Remove them from the skillet, then set aside on a plate.
  2. Sear Steak: Turn the heat up to high, then add cut sirloin steak and season the beef with salt and ground black pepper. Let the steak sear for a minute, then stir and cook the steak bites until they are golden brown, about 4-5 minutes total.
  3. Add Herbs & Butter: Add unsalted butter, minced garlic, chopped fresh thyme, rosemary, and oregano.
  4. Combine: Add the cooked potatoes to the skillet, then cook for 2-3 minutes to let the flavors meld. Serve immediately.

Ingredients 

  • 1 tablespoon olive oil
  • 1 pound sliced Yukon gold potatoes cut into ½-inch pieces
  • ¼ teaspoon garlic powder
  • salt to taste
  • ground black pepper to taste
  • 1 ¼ pound sirloin steak cut into 1-inch pieces
  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon chopped fresh oregano

Instructions 

  • Heat a large cast iron skillet over medium-high heat and add 1 tablespoon olive oil, 1 pound sliced Yukon gold potatoes, ¼ teaspoon garlic powder, and season with salt and ground black pepper.     This is a wonderful base recipe! Thank you for sharing! I’ve used it a dozen or so times over the last year, especially when camping (using griddle) and it’s amazing every time! We’ve deviated from salmon to gnocchi, added veggies like onions and zucchini and and peppers (red, yellow, orange and green). Agree that potatoes need a tad longer but really? Just eat one and you’ll know when it’s ready!

    This is a keeper. It was wonderful. I did the baking soda for a tenderizer and it worked. The potatoes are just bursting with flavor. I did not change a thing. Thank you.

    Finally….a meal everyone ate! I think I’m the only one who was critical but of course, aren’t we always our own worst critics? I had to use my cast iron grill pan but it worked. (And now I have a new method for cooking my breakfast potatoes!) The meal could have used more depth of flavor and that is my biggest critique. Not sure what to add – garlic powder? I don’t want to add onions. Perhaps a tad more salt? Overall, it was awesome! All 3 of children ate most of it and 1 returned for 2nd helpings. I was pleased as punch.

    Tasty & full of flavour, great mid week recipe. The whole family enjoyed it and that’s no mean feat. I used new potato’s which needed to be par boiled, but worked so well. Definitely make this again ??

  6. I cut my potatoes and steak add the same ingredients and put everything in a sheet pan and bake at 375 for 45 minutes and it’s wonderful and in the summer time I throw it on the grill in foil packs and cook about 30 minutes

    Loved the steak bites but my potatoes took about 30 minutes to actually cook and the garlic burned! The potatoes were inedible unfortunately. Next time I’ll roast the potatoes and make the steak in the cast iron skillet.

    My family loved this recipe. Even my picky eater devoured a second helping. I’m floored! I did use dry vs fresh herbs so used only 1/2 teaspoon of each.

I made this tonight and it was delicious…didn’t have a cast iron pan so I used my wok?‍♀️ Turned out well…I’m laughing now, because I added a chopped onion….my recipe had several pictures of an onion being cut (apparently an add for a knife sharpener)…so I cut one during prep and used it rather than waste it?
