These soft and chewy Snickerdoodle Bars have layers of cookie dough, cinnamon and glaze over top making these thick, buttery and irresistible. These are a definite MUST make!

These are one of my favorite cookie bars! Since you love snickerdoodle as much as I do, you have to try my cream cheese snickerdoodles, brown butter salted caramel snickerdoodles or brown butter snickerdoodles.

Snickerdoodle Bars

All I can say about this recipe is, MAKE IT! If you like snickerdoodles, you will LOVE these. I ran 3 ½ miles this morning and walked 2 to pick up my boys from school. As I was eating my second snickerdoodle bar I was thinking, dang I just ruined what I did today. But they were so good, I didn’t even care. Have you heard the saying, “skinny and sad or happy and fat?” Well I chose to be happy and fat today. And these were worth every mile I ran! Trust me, they are absolutely delicious and loved by the whole family!

Snickerdoodle Bars Ingredients:

  • Flour: All purpose flour works best with these snickerdoodle bars.
  • Baking Powder: This will help with rising the bars while being baked.
  • Salt: Just a pinch of salt will help with raising the bars as well as flavoring.
  • Butter: Unsalted butter does better but if salted is what you have then eliminate the salt.
  • Sugar: Brings in the sweetness and flavoring.
  • Brown Sugar: The combination of white sugar and brown sugar is the very best!
  • Eggs: For best results have them sitting out to room temperature before adding them into the mixture.
  • Vanilla: Flavorful vanilla is one of my very favorite ingredients!

Cinnamon Filling:

  • Sugar: Combine the cinnamon and sugar for a sweet and savory combination over the snickerdoodle bars.
  • Cinnamon: Has a subtle flavorful that is sprinkled over the cookie bars.

Glaze:

  • Powdered Sugar: Sweet and thick for making the glaze rich in flavor.
  • Milk: Creates a silky and glossy glaze combined with the powdered sugar.
  • Vanilla: Always the best to add in some flavoring.

How to Make Snickerdoodle Bars:

  1. Make the dough: Preheat the oven to 350 degrees. Spray or grease bottom only of a 9×13 pan with cooking spray. In small bowl combine flour, baking powder, and salt. Set aside.
  2. Mix together cinnamon filling: In large bowl, beat butter on high until creamy. Beat in sugars. Gradually beat in eggs and vanilla into sugar mixture until combined. In low speed, beat in dry ingredients until combined.
  3. Layer the snickerdoodle bars: Spoon half of the batter into pan and spread evenly. Sprinkle the cinnamon filling mixture on top. Drop the rest of the batter by teaspoons on top of the cinnamon filling mixture. Bake 20-25 minutes until golden brown or until toothpick inserted comes clean. Let cool for an hour. Drizzle the glaze over the bars.

The Recipe Critic Pro Tip: 

I lined my pan with parchment paper before pressing down the dough. This will help the snickerdoodle bars not stick. I love that stuff!

Tips for Making Snickerdoodle Bars:

  • Room Temperature: Try to have the ingredients sit out prior to mixing. This helps all the ingredients mix well together.
  • Baking glass: I use a metal baking dish, a glass one would be fine but the bars may need to bake for longer.
  • Storing snickerdoodle bars: It is best to store snickerdoodle bars in an airtight container or ziplock bag for up to 5 days.

Ingredients
  

  • 2 1/3 cups Flour
  • 1 1/4 tsp Baking Powder
  • 1/2 tsp Salt
  • 3/4 cup Butter or margarine softened
  • 1 1/4 cups Sugar
  • 1/2 cup Brown sugar packed
  • 3 Eggs
  • 1 tsp Vanilla

Cinnamon Filling:

  • 1 tbsp Sugar
  • 1 tsp  Cinnamon

Glaze:

  • 1 cup Powdered Sugar
  • 1 to 2 Tbsp Milk
  • 1/4 tsp Vanilla

  1. We normally love snicker doodles but these just weren’t that great. We took them to a family party and no one really likes them. We definitely won’t make them again.

  2. I tried to make these this past weekend. They did not look like the photo you posted! They were very flat and crusty and they were waaaay too sweet, no one could eat them. We ended up throwing the whole batch away. I am wondering where I went wrong — the only thing I can think of is maybe I should have added some flour to the dough mixture to fluff it up a little. Any ideas?

  4. Made them tonight. Sooooo delicious. I tried putting half of the dough in the pan but that wasn’t working for me. I decided to just put all of the dough in the pan. I then sprinkled cinnamon/sugar on top. My ratio was the same as if I was making cinnaon toast. After it baked and cooled I drizzled the icing all over. It tasted just like a snickerdoodle cookie with icing. Thanks for sharing the delicious recipe!

  5. I love the time it saves to make cookies in a pan. I’m in charge of dessert tonight for a dinner and found this recipe on Pintrest. I did add cream of tarter to make them true snickerdoodle bars.

  6. The recipe calls for 1 tsp cin and 1 tbsp sugar?? Not sure what the problem was. above but no need to reduce the cin.. The recipe is correct and delicious the way it is written.

  7. I made these yesterday for our swim banquet pot luck. So good. I am a snickerdoodle fan to begin with and anything I can make into a bar cookie all the better. I am glad that I read the comments about the cinnamon (so I heeded your advice, 1 tsp cinnamon to 1 tbsp. sugar). Saving this recipe to my favorites.

  8. I made these and chickened out when it came to mixing the cinnamon together I just couldn’t believe that the recipe called for equal amounts. I was planning on sprinkling them with powdered sugar instead of the glaze and I was afraid there wouldn’t be enough sweet to overcome the cinnamon. Any opinions? I will make these again, they came out so good, and I am planning on adding more cinnamon this time, just not sure how much.

    1. I totally agree with the cinnamon! I wonder if I made a typo because we made these last week and it seemed like the cinnamon was a little too much! I am going to reduce the cinnamon to 1 tsp of cinnamon with 1 tablespoon sugar. 🙂

    2. The fill ingredients are NOT the same amounts: Cinnamon is 1 TABLESPOON (tbsp)
      Sugar is 1 TEASPOON (tsp) Enjoy
