Spinach Salad Recipe

I adore an amazing mouthwatering salad. And now that I have lost the weight after my last baby, I am in maintenance mode. Don’t you think that maintaining a weight can often be harder than losing weight? Especially when you are a foodie at heart and want to eat #allthethings? I have learned that it comes down to finding a good balance and what is right for you. A good salad is on repeat for me. When we went to Hawaii, or when I went on a weekend trip, I knew that it was important to come back and get right on track again.

I love a good salad, and I love it when it involves spinach.ย  Especially when the salad is combined with fruits like apples, pears, strawberries, blackberries, you name it. I love it when you get the best of both worlds of your fruit and vegetable. I know that you will love everything that is involved in this salad. It is especially amazing tossed in the apple cider poppyseed dressing! You could also try it with my Catalina French dressing.

  • In a large bowl, combine spinach, strawberries, apple, and pear.
  • In a small bowl, whisk together the apple cider, olive oil, apple cider vinegar, honey, and poppyseeds. Pour over salad and toss.
  • Top with feta cheese and chopped pecans.

    This was good. But I DID NOT use the apple cider. #1) it just didnt make sense to use it in my brain. #2) 1/2 cup seemed like an awful lot. The dressing was fantastic without it. I used walnut oil rather then olive oil as well. I tossed in a few raspberries and blackberries as well just for fun.

  2. Can you tell my what kind of apple cider you use for this dressing? Iโ€™ve
    Never bought apple cider other than the stuff that is in pkgs that you add water to and it has lots of sugar in it.

      The recipe calls for apple cider and apple cider vinegar. Is there a typo error here? (in your response to Marianne Jan 17, 2023)

    My husband and teenaged daughter enjoyed this. My daughter and I used the homemade dressing. My husband used Italian dressing instead. I didn’t have pecans but subbed toasted walnuts instead. Very healthy and versatile.

    Thumbs up to this salad. It’s so colourful and delicious. I’ll definitely try it out but will it be okay if I eat this for dinner? It’s sour though. Thank you for sharing.

  5. I think maintaining after having kids is harder! It’s almost as if when you need to lose, it just makes sense to deprive yourself of all the sweets but when you are in maintaining mode, you can splurge sometimes so long as you don’t let it overtake your life! A salad like this is GREAT to have on repeat!!!
